Lime Cilantro Rice

I thought this was a little bland. It was simple and refreshing but it tasted much better once I put some sauce I made on it. I also had to add some salt and pepper. Probably won't become a regular at my house.

BREAKSTONE'S Curried Mashed Sweet Potatoes

This had an off flavor to it. I was really disappointed because we love sweet potatoes and curry but just not together I guess. Maybe the sour cream gave it the odd flavor. Will not make again.

Slow Cooker Lentil and Ham Soup

This was very flavorful, easy, and most of all healthy. I subbed the Italian seasoning for the oregano, etc. because it was what I had on hand. I also subbed a can of stewed tomatoes in for the tomato sauce as others suggested. I did add a little bit of salt prior to eating but I used no added salt canned products. I will keep this in my rotation to use up leftover ham after holidays.

Catfish Cakes

I enjoyed the idea of these- a cheaper version of crab cakes. They had a great texture (I also coated with a little flour to make crisp) and they held together nicely. I would have preferred more seasonings- maybe some lemon, hot sauce, cayenne, etc. I think I will keep this in my recipe box but will try again with some stronger seasonings.

Black Bean Hummus

Spicy Chicken Breasts

I didn't think this was spicy at all but my husband thought it was a good amount of heat. I have a love for really spicy things though. It was okay but nothing fantastic. However, it was easy to make since I had everything on hand.

Cranberry Orange Loaf

I decided to make this out of the blue to use up some fresh cranberries that I had left over. Makes a very flavorful bread- I love the tartness of fresh cranberries. I used Splenda instead of sugar but followed everything else as stated. Would recommend.

Crustless Spinach Quiche

My guests and I loved this. Served it at a Christmas brunch. Followed the recipe to a T and wouldn't change a thing. I prepared it the night before and popped it in the oven on the morning of the brunch. The meunster cheese gives it a unique flavor.

Amazing Pecan Coffee Cake

I made it in bundt pan as other reviewers did. I also made 1 1/2 times the filling and baked it in the middle of the cake. Part of the cake did end up sticking in the pan but it had a very nice flavor. Was sort of difficult to slice because it was crumbly. Overall a very good dish though, not too sweet for the morning.

Sweet N Sour Meatballs

I am basing my review on the sauce alone since I used ground turkey for the meatballs. (I would not recommend doing that because the meatballs were too sticky to form together. I had to add a bunch of extra bread crumbs.) The sauce was just okay. It was thicker than I would have liked and it didn't make enough to cover the meatballs.

Knudsen Hot Broccoli Cheese Dip

This was well liked by everyone. Very easy to make as well. Would make again. I served it with crackers, celery sticks, and baby carrots. Would also be good with tortilla chips.

Pasta Fagioli Soup II

Had a good flavor overall and was very easy...no chopping involved! I did as others suggested and omitted the bacon and subbed in hot Italian sausage in its place. I also skipped the can of tomato sauce and salt. Will likely make again. Also, the recipe made way more than 8 servings. We put some in the freezer for an quick dinner on another night.

Jalapeno Hummus

Everyone loved this at the party that I brought it to. I put the hummus on top of cucumber slices and topped that with a cherry tomato half. I would have preferred a little less curry powder. I also would have preferred a bit smoother texture. I used a food processor, but next time I will try the blender.

Honey Chicken Stir-Fry

I usually go for spicy stir fries so this was something different for us to try and we really enjoyed it. It was a last minute find and I decided to make it to use up some frozen chicken breasts. I only had a frozen vegetable blend of sugar snap peas, carrots, mushrooms, and leeks so I substituted that for the broccoli blend. Great on a busy weeknight. Served with brown rice made in rice cooker.

Favorite Old Fashioned Gingerbread

Took the advice of others and doubled all spices. To cut calories I substituted splenda for the sugar and used 1/4 cup applesauce and 1/4 cup butter instead of the 1/2 cup butter. Had a nice flavor when served with cool whip. Very easy. Did it in a loaf pan and came out looking very nice.
