Low-Fat Blueberry Bran Muffins

These are good. Followed the recipe exactly. They have a very "bran-y" flavor to the them. I used frozen blueberries. I would definitely make these again when I'm in the mood for a healthy, high fiber muffin.

Cabbage Patch Soup

This was really good. I subbed chopped smoked sausage for the bacon and added a bit more than was called for (about 1/2 cup). I also added only 1/2 teaspoon of salt rather than 1 teaspoon as called for. I will definitely make this again with these same changes. I also think I will try adding some diced potatoes in next time too. My husband even raved about it and he doesn't usually like cooked cabbage. Thanks!

Delicious Raspberry Oatmeal Cookie Bars

I saw this recipe and made them the next day...they just looked so good and they were! I had to substitute white sugar for brown because I was out of brown sugar and molasses. The texture and taste were still great though. I also used raspberry preserves with seeds because it it what I had on hand. Thanks for the great recipe...it's a definite keeper!

Artichoke Pesto

This was tasty. I made it as is and then thought it needed some texture changes so I added a handful of toasted almonds and blended them up with the pesto- but I like my pesto to be nutty. Black pepper was listed on the ingredient list twice and no salt was listed, so I added 1/4 tsp of salt and 1/8 of tsp of black pepper. Thanks for the recipe!

Slow Cooker Macaroni and Cheese I

I did as others suggested and left out the egg as I did not want a custard style texture. I also just added 3 cups of cheese as was recommended by others but I think I will add the 4 cups next time. We enjoyed this overall, although mine did burn a little on the bottom and around the outside after cooking for 5 hours. I will cook for less time and maybe add some paprika or dry mustard as others have. Thanks for the recipe!

Heavenly Angel Food Cake

This was delicious! So much better than store bought or cake mix angel food. It was worth the time. The only thing I adjusted was using egg whites from the carton and it worked perfectly. Thanks so much for the wonderful recipe!

Linguini with Cashews and Scallions

We really enjoyed this as a meatless dinner. I added some snow peas for more vegetables. It is a great one pot meal (plus a colander). I did add just half of the butter that was called for and used whole wheat pasta to make it healthier. This is a keeper for a quick and easy weeknight meal! Thanks!

Carnation® Quiche Lorraine

I was disappointed with this. The texture was just off. The only change I made was subbing ham for bacon. I cooked it for more than 45 minutes and it still didn't seem "done" to me. By that I mean that the eggs were cooked but the texture was not firm enough for our liking. The flavor was wonderful though. I probably won't be making this again but if I did I think I would add more eggs to give it a firmer texture.

Creamy Italian Dressing I

This was okay as an onion dressing. I followed the directions to a T and used a yellow onion. Tasted very peppery and had a strong onion flavor. I served it on a wedge salad with feta cheese and avocado which tasted good but nothing like creamy italian in my opinion.

Flourless Peanut Butter Cookies

I had a sweet craving tonight and wanting something quick, easy, and not too bad for me. This did the trick! I also subbed splenda for sugar as others did. I used crunch peanut butter which made them a bit crumbly but still okay. This is a great recipe to have on hand when you need a cookie in a pinch. I also liked the small yield since it is just me and the hubby.- The above was my original review but today (1 day later) I think the cookies have an odd aftertaste, but I'm going to attribute that to the splenda.

Hearty Morning Muffins

These are very satisfying in the morning for a healthy treat. I subbed raisins for the chocolate chips, used Splenda instead of sugar, and used 1/2 applesauce and 1/2 oil for the full cup of oil. They are very moist and not too sweet. I used the food processor on the carrots, apricots, and banana for quicker results. Thanks for the recipe!

Shepherd's Pie VI

This was tasty! I didn't mash the carrots, I just sauteed them in with the ground beef and added frozen green peas also. I didn't have any cheese on hand, so that was left out. I took the advice of another and added in Worcestershire sauce with the broth to give some more flavor. I did make my own mashed potatoes because we don't like instant. Would definitely make again.

Baked Oatmeal I

This was tasty but I wish that it had said "overnight" in the preparation/cook time. I started making this to eat this morning and then realized in the directions that it is supposed to sit overnight. I decided to just skip that step and it turned out good anyways. I also subbed applesauce for oil and used splenda for the white sugar. I also added some sliced almonds on top with the cinnamon and brown sugar. Overall, a good dish unlike anything I'd ever had. It reminded us somewhat of a breakfast bread pudding.

Cilantro Serrano Cream Sauce

I really enjoyed this. I served it over some chicken tacos. I think it would make a lovely dip with tortilla chips or carrot sticks too. I subbed the cream for low fat sour cream and used low fat mayo rather than regular. You can vary the heat by changing up the size, amount, and type of fresh peppers you use. I used jalapenos.

Lime Cilantro Rice

I thought this was a little bland. It was simple and refreshing but it tasted much better once I put some sauce I made on it. I also had to add some salt and pepper. Probably won't become a regular at my house.

BREAKSTONE'S Curried Mashed Sweet Potatoes

This had an off flavor to it. I was really disappointed because we love sweet potatoes and curry but just not together I guess. Maybe the sour cream gave it the odd flavor. Will not make again.

Slow Cooker Lentil and Ham Soup

This was very flavorful, easy, and most of all healthy. I subbed the Italian seasoning for the oregano, etc. because it was what I had on hand. I also subbed a can of stewed tomatoes in for the tomato sauce as others suggested. I did add a little bit of salt prior to eating but I used no added salt canned products. I will keep this in my rotation to use up leftover ham after holidays.

Catfish Cakes

I enjoyed the idea of these- a cheaper version of crab cakes. They had a great texture (I also coated with a little flour to make crisp) and they held together nicely. I would have preferred more seasonings- maybe some lemon, hot sauce, cayenne, etc. I think I will keep this in my recipe box but will try again with some stronger seasonings.

Black Bean Hummus
