I used homemade sauce instead of ragu but this recipe is a keeper. So easy to make and you could add in veggies or meat if you wanted to.

Pork Chops & Stuffing Bake

This was good and really simple. I did as another reader suggested and put the stuffing down first, then topped it with the chops and then the soup mixture. I didn't use the cheese.

Corn and Crab Bisque

This had a great flavor but I thought it could have been a little thicker. I ended up adding some extra flour to do this. I used canned lump crab meat and canned corn and it was still good. I also used fat free half and half. Thanks for the great tasting recipe.

Hearty Egg Casserole

I didn't care for the canned mushrooms and will use fresh next time. Otherwise it was a great recipes. I think it could use a little spice so I did add some Tabasco sauce to mine after the casserole was cooked.

Can't Tell They're Low-fat Brownies

These are great for being lower in fat. I used applesauce instead of the prunes because that is what I had on hand. I also added in a small handful of chocolate chips just to give it a little something extra (even though I know it also added more calories!). This is a great, quick recipe to keep on hand and it doesn't make a whole bunch which is great for just my husband and I.

Italian Sausage, Peppers, and Onions

I think this recipe really depends upon the kind of sausage you use. I used a spicy Italian sausage that I got from a local farmers market. I should have browned it more in the first step because when I added it back into the peppers it wasn't nearly done. As a result, the peppers were overcooked so that I could get the sausage done. But it was still tasty! I also used beer as another suggested and I used fresh herbs since I had them on hand.

Pumpkin Spice Cookie

These are great and so incredibly easy! I threw in some white chocolate chips to give them a little something extra and it was a great addition. I wish that they were a little flatter and crispier instead of so cake-like but I guess that is expected for a cake mix cookie. I will definitely keep this on hand!

Slow Cooker Chicken Taco Soup

This wasn't spicy enough for us. If I was to make it again I think I'd add two packets of taco seasoning instead of one and the spicy rotel instead of regular. I didn't think the beer gave it an odd taste at all (used Red Stripe). It was too thick so I did add a little bit of water in the end to thin it out some (maybe this is what made it not spicy enough).

Fresh Cucumber Salad

This was nice and refreshing and gave us something different as a vegetable side dish. I let it marinate for about 8 hours. I had to use dried herbs but it was still good. This is a keeper!

Hearty Vegetable Lasagna

I followed this recipe exactly but I thought it had too much a strong bell pepper taste. I think it would have been better with other vegetables in it (perhaps some squash, zucchini, or carrots). I also thought it was too much sauce and not enough vegetables which would have given it some bulk. It wasn't bad but I was expecting it to be better.

Spinach Brownies

I really wanted to like these especially after all of the great reviews but I didn't find it to be anything outstanding. It was almost too moist/wet after it was done cooking and I did drain the spinach after sauteing. I used 1/2 the butter called for. I thought there would be more batter but it was mostly just spinach. Overall I was not that impressed.

Blueberry Coffee Cake

This was wonderful! I used butter instead of shortening because it's what I had on hand. The cake came out so moist and not too sweet. The coconut on top was a delicious change from the usual streusel topping found on coffee cakes. I can't wait until we have a brunch get together in the future because this will definitely be on my list!
