Eggplant with Garlic Sauce

Oh, man...I love this recipe! Garlic eggplant is one of my favourite side dishes, but because I underwent radiation many years ago, my mouth is extremely sensitive and I can no longer tolerate even the mildest spiciness...and every restaurant around here makes garlic eggplant with hot red peppers added. So upon seeing this recipe I had to give it a try. I omitted the crushed red peppers and added fresh garlic rather than powdered (have to agree with everyone else - fresh garlic is the only way to go!), and this came out exquisitely! I can now again enjoy my favourite dish, and it takes no time to prepare either...and at a fraction of the cost of takeout. Thank you, thank you, thank you for this!

Monkfish Provincial

I skipped the cajun seasoning (as I cannot eat anything even mildly spicy) so instead added some nutritional yeast to the flour along with the salt and pepper, and it turned out very tasty. I also covered the pan and let the fish simmer for the last couple of minutes of the cooking process. The fish (monkfish in mine) was tender and moist, with a delicate flavour. Very nice!

Creamy Clam, Crab, and Vegetable Soup

Mine didn't turn out like the photo included with the recipe; the end result of mine was much redder with the addition of the wine, and it was a thicker end result as well. However, the taste is very good! I'd definitely make this one again, maybe adding a bit more water next time.

Zucchini Herb Casserole

Excellent recipe; this was easy to make and has wonderful flavour, especially when reheated as leftovers. I did take the advice of some other reviewers and doubled most of the herbs; I also used canned, italian-spiced tomatoes (fresh tomatoes at the grocery store this time of year taste like cardboard)...and I added a bit of frozen chopped spinach when I was cooking the zucchini mix. Since it's just myself at home I have lots of leftovers, and will make a great lunch to take to work. Definitely have this one saved to my recipe box!

Kidney Beans and Corn

I found this to be a very easy to make, nice recipe. As a variation, I didn't add as much cumin as called for (I added about half), and I only added a pinch of chili powder. But I also added some baby bok choi (chopped) to the recipe as the onions and garlic cooked, and then added about 15 oz. of canned diced tomatoes mixed with herbs. Also threw in a bit of orzo, and after it was done it came out very tasty. I've added this one to my favorites!
