Cherry Rhubarb Crunch

Reviewed: Jun. 3, 2011
Fabulous! I made this for a dinner get-together and one of my friends (who doesn't even like cherries) went back for seconds. I only made 1 small change. I used slivered almonds in the top crumb mixture rather than walnuts. Next time I think I will pat 2 1/2 cups of the crumb mix into the pan for the bottom crust. I personally prefer a more substantial bottom crust. Great TART recipe!!!

Peanut Butter Cookies VIII

Reviewed: Jun. 3, 2011
I tried this recipe because I accidentally bought a jar of crunchy PB. I followed another reviewer's suggestion to use 3 eggs - the batter seemed to need that little extra moisture. Overall I think these are pretty good. If you're looking for a traditional chewy PB cookie, then make a traditional recipe. If you're up for trying something different, this is a good/easy recipe. The cookies definitely have a cake-like consistency to them. I think I might try using them as the cookie portion of a whoppie pie.

Microwave Sponge Pudding

Reviewed: Jul. 18, 2010
Pretty good for a really quick dessert. I didn't have self-rising flour, so I made some by adding 3/4 tsp baking powder and 1/4 tsp salt to a 1/2 cup all-purpose flour. I also added a small splash of vanilla and about a 1/4 tsp of cinnamon. I dividing the batter among 4 ramekins to make individual servings and microwaved them for 1:45. I thought the cake turned out light and fluffy, but my husband thought it was a bit dry. Topping it with some homemade strawberry jam and a dollop of whipped cream was nice.
