Peanut Butter Bars I

Really easy and really yummy! I used the ingredients as listed. I chilled the bottom layer a little too long before topping with chocolate and the first piece I tried separated...maybe bringing it to room temp will make it stick together again.

Best Brownies

I made this exactly as written for the brownies, but I had to modify the frosting (more on that in a minute), and they were delicious!!! Even with the frosting, they aren't super sweet, but they are so rich at the same time! I halved the frosting because I was serving them to family who aren't crazy about sweets. While I was trying to mix it up, it was just really clumpy and dry- I couldn't get it smooth. I added a splash of water to make it spreadable. Maybe it would have melted and spread on the warm brownies without the water... It turned out as a nice shiny glaze! Next time I make these, I may add coffee to the frosting...and garnish with a few pecans!

Baked Oatmeal II

This was just ok to me. If you're trying to eat oatmeal and hate the mushy texture of it made the traditional way, this is a good option. However, there isn't much flavor. I did add a little extra cinnamon and cranberries, but if I make it again, I would add even more to try to make it have more taste.

Hearty Breakfast Muffins

Delicious!!! I halved the recipe because hubby isn't a big muffin fan. I subbed apple for zucchini, used steel cut oats, used pan toasted walnuts and crasins, (accidentally) doubled the ginger and tossed in about a tablespoon of chia seeds. I had 12 small muffins even though I halved it- I think they would have been way too moist if I had only done 6 muffins. Before popping them in the oven, I sprinkled the tops with a little extra cinnamon. These are great, but next time I may add more flour to make them a little more cake-like.

Apple Breakfast Bread

I did sub oil in place of butter. I also did half brown/half white sugar. The batter was really dry- I almost couldn't get all the dry ingredients mixed in and my apples weren't very juicy, so they didn't help. When this first came out of the oven it was REALLY dry- However, after sitting overnight, it was moist and delicious the next morning! I would make this again for sure, keeping the substitution of oil for the butter but wouldn't change anything else. Overall, the bread was tasty after it sat for a while.

Quinoa and Black Bean Chili

this was delicious! i had to leave out a couple of things, as i didn't have them on hand, but will be sure to include them in the next batch. i also added extra chipotle- loved the smokey flavor! will make this again for sure!

Sweet Mustard Chicken Bake

YUMMY!!! as many others mentioned, i cut the butter in half and i used almost equal parts honey and mustard- i went a little heavier on mustard because i didn't want it too sweet. i also just used plain old yellow mustard because that's all i had on hand. i also used chicken tenders instead of breasts, packed tightly together. it was sooo moist and tender. this went in my recipe box and i will be making this again and again!

Favorite Old Fashioned Gingerbread

Rating this exactly as written. There is not a strong enough ginger taste- the molasses overpowers all the spices. This is the second time I've made it. The first time I think I must have read the reviews and tossed in extra spices because I LOVED the results, but this time I measured everything exactly and it just wasn't that great. I also made muffins and got 24, which I will be taking to work, even though they don't taste that great. Definitely worth making, just make sure to multiply the spices.

Easy Hummus

i left out the jalapenos as well...and added olive oil and didn't use much of the bean liquid. it was still very delicious- quick and easy. next time i think i'll try adding in some roasted red peppers!

Korean Spicy Chicken and Potato (Tak Toritang)

this was delicious! i live in korea and have had this dish many times. all my korean friends, especially my boyfriend, were surprised that i was able to make this! i didn't add the sugar...but otherwise, i followed the recipe except i added more water. one tip, don't add extra liquid because you don't think there is enough- as it simmers, the chicken produces a lot of juice.

Southwestern Green Chile with Pork Stew

this was really yummy! i pretty much followed the recipe exactly with the exception of cutting it in half. it was tasty as is. however next time i think i might omit the garlic and beans (i only added a can of black since i had halved it). i tasted it before the addition of those ingredients and the chili peppers gave it a nice kick that seemed to be overpowered by the garlic and diluted by the juice in the beans. i will make this again for sure!

Creamy Chocolate Frosting

this is WONDERFUL frosting!!! and the greatest thing was that i didn't even have to really measure...i just sort of eyeballed it, tossed in the ingredients and it was perfect. for those who complain it's too thin, don't put in all the milk and add a little extra cocoa and/or sugar. i halved the recipe to just 6 servings for a small batch of cupcakes and it turned out great! i would make this again for sure!
