Jenny's Jambalaya

I've been coming to AllRecipes.com for a couple years now, and while so many recipes are wonderful this is the FIRST time I felt so inclined to return to write a review. The flavor and kick was just what I was looking for in a jambalya receipe. The family can't shovel it in fast enough. Mmmmmm good!!!!

Frozen Cranberry Salad

Cabbage on the Grill

I was doubtful this would come out right, but the bacon was crispy and the cabbage texture was perfect. We couldn't stop eating it. Heading to the store for more bacon so we can make more.

Apple Bundt Cake

I put in 1/2 cup apple sauce and 1/2 cup oil as suggested by others. Turned out perfect. Can't say it needed the apple sauce though. This is my boyfriend's favorite now. Slight cripsyness on the outside and very moist on the inside.

Lasagna Alfredo Roll Ups

Didn't change a thing and everyone loved it. I imagine the alfredo sauce you use might make a difference. I split mine into two dishes. One with alfredo mushroom and one with alfredo light. It was enjoyed regardless.

Sweet and Tangy Broccoli Salad

With so many similar recipes, this is the one. Simplest is best without the extra nuts, fruit, etc., that other recipes use. This is just the way my aunt makes it, and it is devoured quickly. (I did use apple cider vinegar rather than white, but I'm not sure it really makes a difference).

Savory Herb Rice

This is a regular side dish in my home now. I've added it to the refigerator for quick reference. Whenever my son visits he wants this rice. Very nice, interesting combination of flavors. For those who don't want the flavored boxed rice variety.

Ham and Cheese Breakfast Quiche

This was fabulous. Didn't change a thing. I chopped up smoked ham steaks and sharp cheddar cheese. It was a meal in itself and could easily be served for dinner.

Apple Glazed Pork Tenderloin

Delicious, moist and tender. Everyone loved the sauce as well. I did have to cook my tenderloin twice as long as the recipe called for and bumping the temperature to broil for the last 10 minutes to get the pink out of the middle but I believe it was because I had a short fat tenderloin, rather than a long skinny one.

Easy and Delicious Chicken

Um-mmmmmmm. Everyone in my family just loved this receipe and said I should make it more often. I used less cream cheese (about 4 oz) as others suggested, and used Fat-Free Caesar dressing (because I had no Italian). I didn't have the 6 hours to wait for the frozen chicken to cook in the slow cooker, but it didn't matter. The chicken was still very good; it just didn't fall apart as easy. I'll be making this one a lot!

Baked Ziti III

This is my go to recipe every year, as I am begged to make ziti every year for our Potluck Christmas party at work. Making it in a crockpot assures you won't have too much to fit in the pan, but you also won't get the perfect baked texture and you'll need to adjust your sauce to your desired dryness level. I tried this last year, and while enjoyed by all, I felt just the sour cream made it too twangy and I had tons left over. This year I made my sauce separate and let it stew awhile adding in spices/flavoring to my liking rather than just opening two generic cans of sauce. The sour cream is a nice touch but I used only just enough to "butter" my noodles with after boiling. I also felt ziti desparately needs ricotta so I replaced the sour cream in the middle with ricotta. A mixture of beef and italian sausage gives a more authentic flavor of ziti as well. There were 11 people total at our Christmas party this year and I barely had a serving to take home with me. Nevertheless, as written, the recipe is still very good and will get rave reviews.

The Best Spinach Salad Ever

Loved this. Reminded me or broccoli salad, which we usually make with raisins and red onions, the nuts and spinach with broccoli made a nice change to the dressing salad.

Blueberry 'S' Pie

Yummy! One can wasn't enough...two cans was too much...and I'm not sure it was "drainable". I used a pie shell from the store and topped with oatmeal "crust." It turned out wonderfully, goooooey delicious blueberries with a big oatmeal cookie baked on top. Delish!

Rachel's Cranberry Chicken Salad

DH was asking if I could make a cranberry chicken salad so I thought I'd give this a go. We like "real" chicken so I boiled fresh chicken and found the salad to be quite dry. Other reviews used canned chicken which is probably why they did not run into a dryness issue. I began adding more mayo and lime juice but was then afraid the mayonnaise would drown out the lovely fruit so I added a splash of whipping cream and it was perfect, just what DH wanted.

Cheesy Pizza Dip

If you're expecting a pizza flavor, you will be disappointed. If you're expecting something different and yummy this is Excellent. More of a southwestern dip without the kick. Very addictive!!!

Chicken Tetrazzini IV

This was quick and easy to make. I didn't change a thing and it turned out great. EVERYone in my family loved it...which is a feat in itself (they even ignored the mushrooms). There are so few meals I can make which all my picky eaters mutually enjoy. This recipe has been added to the few recipes that will allow for a nice family dinner together. Thanks!

Low Carb Cauliflower Leek Soup

I thought this was excellent. I made it exactly as written..except I overlooked that garlic was on the list. It looked very bland and I was thinking rapidly about what I was going to have to do to give it flavor. I added salt and pepper and wow, yummy stuff! I'm not sure why some found theirs watery unless they used small leeks or a small cauliflower. The consistency was just right. I used only 1/3 cup heavy cream (it's all I had on hand) and it was just enough creaminess. I'd almost be afraid to use more. Looking forward to the flavors tmw as others have said it only gets better. It even had a buttery flavor from the saute step. I may sprinkle some of the suggestions made by others in a couple servings to try that sound like they might add even more character: curry, wine, bacon. I'll be making this a lot. Thank you for a wonderful easy and tasty low carb recipe.

Spicy Potato Soup II

Braving hurricane Sandy put us in the mood for soup, and we like spicy! Very easy to prepare with so few ingredients. We added cabbage and swapped the hot sauce with two habanero peppers and it was perfect. Flavored liked stuffed cabbage, but thicker red sauce due to the potatoes. I may add a touch of nutmeg next time.
