Italian Stewed Tomatoes
Good & easy. To deal with it being too "watery", I arranged the veggies in a donut shape in my pan, the liquid pooled in the center, and I simply sucked out the excess with a turkey baster. No problemo.

Rhubarb and Strawberry Pie
Fantastic pie and beginner friendly. (I made it and it tasted great, and I had never made a pie before in my life!) I would love to make a bunch while rhubarb is still in season, but I don't think we could possibly eat it all... I wonder if it would freeze well? It would be nice to have this summer treat in the middle of winter.
