Easy Honey Mustard Mozzarella Chicken

Wow. This was some of the most delicious and moist chicken I've ever made. As with every recipe I find here, I tweaked it to make it a little healthier. I only used 1/2 cup prepared yellow mustard and 1/3 cup of honey, which was more than enough. I also took others' suggestions and mixed them together. After seasoning the chicken with salt and pepper (I skipped the lemon pepper because it seemed like a weird combo to me), then poured the sauce over it. I also skipped the bacon to save calories and fat, but might try it with turkey bacon next time since that's all we eat in my house. After the chicken baked for about 35 minutes, I added the cheese, baked for another 7, then broiled for 3 more. I served it over rice with the extra sauce spooned on top, and it was amazing! What a simple and yummy recipe.

Grilled Salmon with Dill Sauce

This was really good! I seasoned the salmon with salt and pepper, used light Miracle Whip instead of mayo to cut the calories and fat, ground mustard (because I didn't have Dijon), and skipped the brown sugar. Grilled it on the George Foreman without the oil (just sprayed some Olive Oil Pam), and squeezed fresh lemon over the finished fish.

Rosemary Ranch Chicken Kabobs

My family and I loved these! I always read through the reviews before making any recipe, so based on what others had to say I reduced the olive oil to 1/4 cup, and used light ranch to make it a bit healthier. Other than that, I didn't change a thing! We've already made these twice in the past couple of weeks.

Banana Bread V

I chose this recipe because I only had 2 bananas on hand, and it's the most delicious, moist banana bread I've ever had. I made a couple of changes -- used half brown sugar and half white and decreased it to 3/4 cup based on reviews, added 1/2 tsp nutmeg, 1/2 tsp cinnamon and 1 tsp vanilla, and also used whole wheat white flour instead of white flour. I also didn't have any nuts, so I left those out. It took 50 minutes to bake at the recommended temp, and my apartment smells amazing! This was my first attempt at making banana bread, and I won't even bother trying another recipe!

Chicken With Mushrooms

This is a delicious recipe, but even better with modifications. My family really liked it the first time I made it, and absolutely loved it the second time around with the changes I made. I used a large box of mushrooms because we all love them, and sautéed them, along with half a chopped onion, in white wine, olive oil and garlic. I browned the chicken in olive oil, garlic and white wine, but had a hard time getting the breading to stay on the chicken, so I may skip that part altogether next time and also save some calories. To lighten it up even more, I also skipped the cheese. I really don't think the dish needs either. Instead of broth, I used a chicken bouillon cube dissolved in 3/4 cup of water and mixed in 1 can of cream of mushroom soup, as others suggested. I also seasoned the dish with salt, pepper, onion powder, garlic powder, parsley and basil, and served it over rice with the sauce from the pan as a gravy. I will be making this often!

Tuna Noodle Casserole II

This was a delicious casserole..I lightened it up a bit and made a few changes to it. I only gave it 4 stars because I think it would have been quite dry without my changes. I used Ronzoni Smart Taste egg noodles, 1 1/2 cups of skim milk, 1 can of cream of mushroom soup, 1 can of 98% fat free cream of chicken soup, 3 cans of albacore tuna and fat free shredded cheddar cheese. I also used a whole onion and topped it with reduced fat Ritz crackers. Yum! The whole family loved it. Very creamy and cheesy.
