Lemon Pie Bars

Ok. I have to admit that a few days ago, I had never heard of lemon bars. I looked up a recipe, to make for a friend of mine. Needless to say, this is my first attempt to make them. I usually start off first time doing the recipe just as given and then next time modifying according to my taste (if needed). However, based on these reviews I went ahead and made 1.5 amount of the filling. It took me 5 lemons to get enough lemon juice. I even added 2 limes. I baked the crust for 15 minutes and with the filling about 22 minutes. If anything, I found that there should of been just an inch more of the crust dough. It took me awhile and effort to cover the whole 9x13 pan. Even though, I'm more of a chocolate person, I liked the taste of these. With 5 lemons and 2 limes, it surely came out lemony enough. Very good. I will make it again. I'd suggest to let it cool down completely, before you cut it, if the sharp clean edges are important to you (for presentation). Also, based on the photos, I noticed that people might not know that you should shift the powdered sugar on top of these-once it's completely cooled. I'd recommend it!

Best Chocolate Chip Cookies

I made this together with my 4 year old son, today for the first time. It was actually my very first attempt to make these cookies from scratch. I must say that I did not set my expectations too high. But the very first batch coming out of the oven, came out perfect! I only had one cookie sheet, so from this recipe I baked 4 times. The first time round, i only got 1 cookie. My husband and son ate them so quick. Definitely worth making! Will keep this as my go to recipe. I read the review of someone saying how they substituted 1 cup of flour with oatmeal. I would like to try that next time. I like oatmeal cookies and this would make it at least a tiny bit healthier cookies.

Tres Leches (Milk Cake)

This cake is easy to make. I made it for the first time, let it sit overnight and added the whipped cream in the morning. It is good but I must say it is too sweet (for my taste-and i love sweet). Also, I think there was too much milk mixture, got a bit too soggy. But it might have been that the cake came out a bit flat or that this is how it has to be? I live in San Antonio, TX and have had tres leches locally here only a couple of times, but they've always been a bit drier. I would make this recipe again, for sure. Just would take out some sugar and have less milk mixture. I subsituted 1 cup of heavy cream and 1 cup of non-fat milk (instead of 2 cups of whole milk) per someone's review here, because I don't have whole milk at home. I wish I had just left it 2 cups of non fat milk, because together with the evaporated milk and condensed milk, it comes out very rich. (I am not an expert of what a "real" tres leches should taste like-this review is only based on my personal taste). My 4 year old likes it!

Cream Corn Like No Other

This was the first time for me to make cream corn. I made it for Thanksgiving dinner. This is absolutely delicious! My husband loved it as well. I did not have heavy cream, so I used half and half (I read from the review that someone had done it). I would like to try it with heavy cream as well, next time. Will surely make it again and again and again. No reason to look for another recipe. Thank you so much for sharing it with us!

I made this recipe to go with fajitas, beans and spanish rice. This is my first time to do guacamole and I actually do not like avocados, so I made it (following the recipe, put much less onion in it, and couldn't find cayenne pepper) without ever tasting it. My husband who is at home with everything Mexican and Tex-Mex, said that it was really good. I asked him for future references, if there was anything he would change about it, and he said NO!!! So, it must be good. I will keep the recipe and do it again!
