Mini Meatloaves

These were great- I followed the advice of others and used a muffin pan instead of making the loaves. The entire family loved these and will make agan.

Rhubarb and Strawberry Pie

This pie is so delicious!! I was nervous about it being runny so I followed the advice of one poster who said that when the pie is done, turn off the oven and leave it in for 15 minutes. The pie slices perfectly, even the first slice.

Salsa Chicken Burrito Filling

Great recipe and easy. I used tomatoe sauce out of a jar rather than the can because it was what I had on hand. I cooked the chicken on the stovetop, but do think that it would have been better in a slow cooker. Next time I will try it that way.

Zucchini Patties

Pork Chops with Blue Cheese Gravy

The sauce is great. I followed other suggestions and used half and hald instead of cream for less calories and used blue cheese dressing instead of the crumble. Was delicious and easy.

Baked Slow Cooker Chicken

I cooked this exactly as the recipes indicates, but was nervous to not have some extra liquid to steam the chicken so I added about 1/2 cup water. Family loved it and will make it again except will try cut up veggies as others have tried with success. Simple, easy and yummy. Thx.

Magic Peanut Butter Middles

I follow this recipe exactly and my cookies turn out perfect every time. When combining the wet ingredients with the dry, do so slowly and thoroughly. I did it too quick the first time and they were too dry. I usually make 32-34 cookies with this recipe with still some of the chocolate cookie part left over. Also, only bake as long as the directions say or they will be hard and burnt. These are delicious cookies- kinda like the cookie version of a peanut butter cup.

Fabulous Beef Tenderloin

Very simple recipe and tasted great. For those who do not cook tenderloin often, you should let the meat stand at room temperature for 2 hours before putting in the oven. I cooked a 6 lb tenderloin and cooking time was 1 hour 10 min for med rare (120 degree internal temp), doubled the recipe for this and basted every 20 minutes. Turned out perfect.

Almond Cranberry Squash Bake

Was very good, but too sweet for most of my guests. I will omit the brown sugar next time, I think or at least reduce it. Also mine turned out a little too moist so next time I will be sure to really press the water out of the squash before adding the other ingredients. It has a wonderful appearance on the table, though. Colors are fantastic for a holiday meal.

Holiday Brie en Croute

Easy and tastes great. Make sure to allow the brie to cool for an hour or it is too runny and just leaks out of the pastry shell. Also, made the mistake of rollng the pastry dough too thin the first time I made this and it did not puff and flake nice.

Delicious Stuffed Potato Pancakes

The ground beef should be precooked and I think this should be specified in the recipe. I put a little cheese on top and served with salsa, ketsup and sour cream on the side. Was a hit!

Eggnog Cheesecake III

This is a great way to use up some of that holiday eggnog! Recipe is easy and tastes great. I always leave my cheesecake in the oven after it is done- just turn off the oven and leave it in there to cool. No cracks and the center does not drop. I would add more than a "pinch" of nutmeg to keep a nice "eggnog" flavor.

Fennel Soup

I thought this soup was excellent, but would make some suggestions. I have never cooked with fennel and the ones I bought at the store were huge. I only bought two and thought it was plenty. I also did not realize the greens at the tops are too tough even if cooked, so just cut it down to the bulb. I did quarter my bulbs as instructed in the recipe but found it to be too big of pieces for a soup. I would advise cutting them into smaller pieces to make the soup easier to eat. I thought the 1/4 cup butter was the right amount because I had to brown so much fennel for the recipe. I agree with others that potatoe would make a nice addition to the fennel.

Ice Cream Cake

This cake is great, but recipe needs some added detail. After you make the cake and cut it, freeze it, then layer in the ice cream, freeze again, then frost. Also, the cake is not attractive without frosting so it is an essential final step. I used the cool whip frosting recipe as suggested by others and this turned out great.

Cranberry Pistachio Biscotti

I reduce the pistachio to 1 cup and keep the dried cranberry the same. I jut thought 1.5 cups gave a cookie too dense in nuts. I also add a couple of drops of green food coloring so that the green cookie shows the red dried cranberry better. More festive at the holiday that way. These cookies are amazing.
