Granola-Chocolate Cookies

This recipe was a great way to use up some granola and some peanuts I had in the pantry. I did use equal amounts of granola and flour (1 3/4 cups of each) as another reviewer suggested but used 1 cup of whole wheat flour and 3/4 cup unbleached all purpose flour to make up the total of 1 3/4 cups of flour. My peanuts were salted so I decreased the salt in the recipe to 1/4 teaspoon. These were delicious-- thanks for the recipe.

Slow Cooker Chicken Dressing

I made my corn bread with 1/2 whole wheat flour and 1/2 all purpose flour and used 2 cups of homemade whole wheat croutons in this instead of the slices of bread-- also, used 1 can of soup and 2 cups of the broth from cooking the chicken plus added some rosemary, celery and diced carrots-- but forgot the eggs completely! Served it for lunch today and everyone liked it anyway :-).

Pumpkin Muffins II

We cannot obtain canned pumpkin here and I only had half the fresh pumpkin the recipe called for so I halved all the ingredients except used 1 egg plus 1/3 cup plain yogurt (and I used 1/2 cup whole wheat flour with 1 cup regular all-purpose flour instead of 1.5 cups all purpose flour) and they still turned out nicely. This is a good basic recipe that smells delicious, looks attractive and tastes good. I will make these again.

Amazingly Easy Irish Soda Bread

I made this (for Thai friends who had never heard of St Patricks Day!) today-- followed another reviewers suggestion to use 3 cups all purpose flour and 1 cup whole wheat...also used butter (not margarine) and 1 cup yogurt (no buttermilk available here) and soaked the raisins in orange juice for about 30 minutes before mixing in. Was a hit and I will make it again!
