Caramel Shortbread Squares

These were really good. The caramel tastes a little funny on its own, but in the bar it was rich and tasty. My chocoalte chips were melting a little grainy so I added some butter and cream which made it into a soft ganache layer instead of a harder chocolate layer.

Whipped Cream Cream Cheese Frosting

This frosting was sooo good. I don't usually like frosting very much but I was eating this plain. My sister was able to pipe it out (we did use powdered sugar, not granulated), but we don't think it would hold up as a wedding cake out on a table all day (it seemed like it would melt). It is light and not too sweet.

Cheesy Beans and Rice

Awesome, delicious and cheesy. Surprisingly healthy (didn't taste like a "healh food" recipe). I mixed everything instead of layered and cooked on the stove instead of baking (my casserole dish was not home). Good and easy.

Day Before Pay Day Fried Rice

Good recipe- flavorful and not too terrible nutritionally. My husband and I both liked it. I wouldn't change anything. 10 months later: We have now eaten this almost every week since we discovered it. We did change it though- brown rice, no chicken, extra eggs.

Lemon Pie Bars

These turned out great. They were easy. Next time I will make sure the crust gets browned enough (the shortbread could have been a little crisper). I used the filling from this in a pre-baked pie crust and topped it with cool-whip- great pie for a bbq.

Jay's Signature Pizza Crust

The recipe as written creates a very wet dough that you have to add a lot of flour to to knead (i let it rise while it was still a little sticky). It baked up into a very thick crust, but everyone in my house liked it. I tried it again with just a garlic butter topping to go with pasta, this time using less water. It was too dense and floury that way- make it as written.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

This was very tasty. I gave it a 4 instead of a 5 because there was a LOT of garlic in it, which I think would turn some people off. I also used fresh spinach instead of frozen (10 ounces I think).

Playgroup Granola Bars

This recipe turned out really good, but next time I would alter it to make it a little less like oatmeal cookies. I made a batch to last the week but everyone who tried one asked to take a few home, so they only lasted three days. (I later tried the recipe using less sugar and more oats- i don't recommend adding oats, but the brown sugar could be reduced to 1/2 cup).

Banana Chip Muffins I

These were pretty good- they weren't quite as cake-like as I expected, but they had a nice muffin texture. I made mine in the giant muffin tins, and they cooked through in about 22 minutes.

Egg Custard Pie III

I used this to make an apple-custard pie. I made my regular apple pie recipe and poured the custard over the apples. It turned out well (i used 2% milk and it was not quite set, i think it would have been ok with whole milk), but the custard is very sweet- that could be because of the sugar all over the apples).

Caramel Snack Mix

This was good- I added pretzels and used mixed nuts, and wheat chex instead of corn or rice. In the future I would follow the recipe more closely. My husband loved it and ate half of it in one day. I gave four instead of five because I thought that the overall flavor was not very exciting- just sweet. I did add some course salt as I was stirring to cool it down- I would definitely do that next time, too.

Sturdy Whipped Cream Frosting

This recipe was similar to the "whipped cream cream cheese frosting" on this site. This one is good but I like the other one better. It has less cream, a bit of salt, and only one extract.

Easy Meatloaf

This is a pretty typical meatloaf- nothing special. My husband liked it, but he just likes meatloaf in general. I'm not a huge meatloaf fan and thought it was standard. The glaze is as good as plain ketchup.

Red Cabbage Slaw

I did reduce the amount of oil to 1/2 cup. I made it a few hours in advance, then transfered it to a serving dish (discarding all of the extra dressing and liquid in the bottom). It was pretty good (no one at the bbq commented on it at all), but not a show stopper.

These were pretty good fresh out of the fryer but when I served them at the party they had developed into a bland and heavy thing. I did use eggroll wrappers which I think are bigger (and therefore detract from the filling).
