About this Cook
I've been in the kitchen for as long as I can remember. I learned how to cook from my mom, grandma, and maternal aunts. I taught myself how to bake and love that more than cooking! I'm allergic to corn, so I've been cooking & baking a lot more now that I've been diagnosed. I love to bake and to cook and even took a culinary arts class in college! Best part? I got to keep my knives and chef's jacket!
My favorite things to cook
Almost anything. I'll try anything once. Baking is my favorite though
My favorite family cooking traditions
Ris al Forno (it's a lasagna dish that uses rice instead of pasta. it's a family recipe), Pasta con Mollica (but w/o the anchovies!), homemade pizza, homemade bread, caponata.
My cooking triumphs
When I brought whole-wheat organic brownies to work and my anti-organic/healthy eating co-workers ate the entire pan!
My cooking tragedies
When I tried to bake a cake for my brother's birthday and the batter was so thick that it wouldn't spread. I baked it anyway and it came out looking like a cow-patty!

Moroccan Chicken
I just made this without the zucchini and turmeric (i didn't have either) and it was absolutely amazing! I had it over coucous and it reminded me of something that i've ordered at Restaurant Marrakesh in Epcot (Walt Disney World). YUM! This will definitely be on the dinner menu again!

Vegan Brownies
I made these to take to a friend's place as he had made dinner for me. He's vegan, so I really needed to make sure that I found a reliable vegan brownie recipe; this one worked out well. I wasn't fond of the fact that there wasn't a binding agent in the recipe, so I added 2 tsps of tapioca starch to hold it all together and it worked very well. I baked these for 50 minutes at 350ºF in an 8x8 pan as i wanted thicker brownies. They were fudgy, amazing, and were very well received.

Greek Pasta Salad
Best pasta salad I've ever made! Was great when it was just done, better 3 hours later, and best the next day! Was made for Memorial Day (with and without cheese, there are some people who were invited who don't like Feta) and it went over very well. Will definitely make this again!
