I am really not good with nice cuts of beef. However I really wanted to make prime rib for Christmas dinner so I took the plunge! I bought an eight pound boneless. I prepared as suggested. Mentally prepared myself to adher to the thermometer...no overcooking no matter what! I told my husband to support me in this no matter what I saw coming from the roast after taking it from the oven. Well, the roast was perfect! I cooked it until the temperature reached an internal temp. of 145 degrees. I set it to rest as instructed. Even though the juices looked red I refrained from popping it back in the oven, which is my usual act. Cutting into the roast was fantastic! There were cuts that were cooked to everyones taste! I was very satisfied with the results!
