Ham Casserole

My Family and I liked this a lot! Was a great new way to use up leftover ham. Will make again! 2 adults and 2 children finished this off in no time :)

Sicilian Meat Roll

I discovered this recipe years ago in one of the little cookbooks you get from the check out line at the grocery store. I was a Nanny then looking for meals the kids would eat. It was a hit then and now with my own family.

Mary's Meatloaf

This was good! Next time I will add a bit more salt, pepper and garlic powder. I cooked it in my 5 Qt slow cooker for 4 hours on high. It came out perfect. One thing I did different for mixing it all up was to mix everything but the meat together first. This got the bread nice and mushy and all the flavors evenly distributed before I added the ground beef.

This came out great! I struggled with the dough as it was too much for my 8 cup food processor. Next time I will just use my kitchen aid. I did only get 2 but could have gotten 3 if I wanted them smaller but it was not worth the time for me. I made one filled with apples and the other with Cream cheese and strawberry jam. Both were good but we liked the apple one better.

Four Egg Yellow Cake

This cake was pretty good. It was much heavier than I would have liked but was moist. I made it for my mothers birthday and she kept saying it reminded her of her aunts pound cake (a good thing). I did use butter in place of shortening. Next time I will make sure it is warmer but not melted (Mine was room temp but my house is cold) and I will make sure my eggs and milk is room temp. I also may cut the sugar by 1/4 cup as it seemed a bit too sweet for me.

Potato Pancakes III

These were pretty good, tasted better the more we ate. Although they were more time consuming than I would have liked. Next time I may try to cook them in the oven on my large stoneware bar pan.

Homemade Black Bean Veggie Burgers

We mostly liked this although I did add a bit of ground beef (1/2 pound) I know I will make it again as it was basically really good but it was we are not used to dishes like this.

Cinnamon Rolls II

These were probably the best cinnamon rolls I have made. I made 1st panfll and pt the into th oven overnight to rise then baked in the morning. Only reason for th 4 stars instead of 5 is that I like more of a cinnamon flavor and these were more like caramel rolls to me. Th 2nd batch I sliced a bit thinner and have frozen for another time.

Pumpkin Apple Streusel Muffins

My whole family Loves these. I leave off the streusel to reduce some sugar and fat. I made a few other changes just to get a slightly healthier result. Only 1 1/2 c All purp. flour, 1/2 cup quick cooking oats, 1/2 whole wheat flour, 1 cup sugar, 1/2 cup dark brown sugar. Everything else the same. Sooo good!

Fresh Pineapple Salsa

This salsa is sooooo good. It also works really good as a topper with simple chicken quesadillas. Even people who do not like traditional salsa will enjoy it. It is a great item to bring to summer BQ's.
