I gave this four stars because I changed a few things but the results were great. First, I did not blend the greens. Instead, I chopped the kale and leek to pretty small pieces before boiling. I drained the greens and squeezed out all the excess water using paper towels. I also sauteed the green onions plus two cloves of garlic in one tablespoon of butter. Then I just mashed everything up with the cream. I thought the results were great and everyone at my St. Patrick's day party liked it.

Slow Cooker Chicken Taco Soup

Hey folks, just thought I'd let you know that I didn't use the beer as I don't drink it and didn't want to buy some just for this recipe. I used an equal amount of chicken broth and the results were great. I might use more taco seasoning next time though.

Spicy Peach-Glazed Pork Chops

Really fantastic!!! I followed the recipe to the T except for the chili paste which I, of course, couldn't find. All I did was use about a half tablespoon of ketchup, some chili powder, paprika, and a bunch of ceyenne pepper. It was great!!!

Favorite Old Fashioned Gingerbread

I'm basing my three stars on the original recipe. I used heaping measures for the spices but still thought it was kind of bland. It was also a little dry. If I make this again I will probably at least double - if not triple - the spices and maybe add a tablespoon of veggie oil. As a base, I guess it was ok.

Rachel's Turkey Loaf

I'm fairly new to making meat loaf cause I always hated my moms. Anyway, I thought this had a really great flavor. I did change a few things. I had some left over crushed tomatos so I substituted those for the soup. I also added about 2 tablespoons of green onions and about a third of a yellow bell pepper for color. Turned out great!!

Brick-Oven Pizza (Brooklyn Style)

Really, really great. I let the dough set for about 28 hours by mistake and it was fine. I was a little confused about the pizza peel? I just dusted the pizza stone with flower and it turned out great. The only issue was that the center of the dough didn't get quite done. Leaving it in the oven until the crust is a little dark probably would have been best. I froze the second pizza and we'll see how it turns out. Also, I'm incluned towards too much sauce and I used more like 1/2 a cup of crushed tomoatoes which was too much. So take it easy. Less is more!

Blackberry Peach Pie

Good pie!! I used Splenda instead of sugar and cooked the filling first. My grandma always cooks her blackberries before puting them in her pies so I did the same. I mixed the blackberries, peaches, corn starch and splenda in a large pan over medium heat until warm. I left as much of the resulting liquid out as possible. I also mixed in a little cinnamon and nutmeg into the filling as well as adding some to the crust after buttered. Turned out great. Not too liquidy. Next time I will cover the perimeter with foil. My outer crust got a little too browened in that first 15 minutes.

All-Purpose Rub

Really great!! I used this on chicken breasts and it turned out really well. I applied the rub and put the chicken back in the fridge for a few hours and then applied some more. The only change I might make is to maybe add cayenne pepper because I like it hot!!.

Strawberry Whipped Sensation

GREAT!!! This was a perfect sumer desert. I was worried because some reviewers said it was bland but I think there was plenty of flavor. Made this for my boss's birthday and she and my coworkers loved it. I will definitely be making this again. I wanted a good size crust so I ended up using around 18 cookies. I might try a lighter version next time: lite cool whip, lighter sweetened condensed milk and gramcrackers. I took the advice of some reviewers and bought a 16 oz tub of cool whip but that was way too much. 12 oz, if you can find it, would be good. Fabulous recipe!!!

Rhubarb Jam

This tastes just like the filling in my grandma's rhubarb pie. I did a half batch, otherwise following the recipe exactly, and ended up with one pint jar and a smaller jelly jar. Really, really great!!

Fruit Salsa with Cinnamon Tortilla Chips

This was really great. Like other reviewers, I would bake the tortillas instead of frying. Also, I added a pear to the mix and used one banana instead of two. I also used splenda when the recipe called for sugar. Really great, I got wonderful reviews from my family!

Downeast Maine Pumpkin Bread

I made two 8" x 4" loaves. Had to bake them for about 1 hr and 20 minutes but they turned out pretty great. Other than that I followed the recipe and it was great.

Creamy Mushroom Soup

Very good taste but I would have liked a more chunky soup. The mushrooms reduce a lot so it turned out to be a lot of liquid and a few muschrooms here and there. If I make this again I will quadruple the mushrooms.

Chicken and Dumplings III

Awesome. I'd never had or made chicken and dumplings but I suddenly got the urge and used this recipe. I followed the advice of a few reviewers and used cream of chicken and mushroom, added slicd muschrooms and carrots, and used green onion. The dumplings were great and the liquid at a great consistency. I did add about 1/3 a cup of water before dropping the dumplings because the liquid had reduced quite a bit. Turned out fabulously.
