Irish Shepherd's Pie

I intended to make this recipe exactly as directed until I got to the grocery store and realized lamb is $9.99 a pound and this calls for two pounds. [Beware!] Since there are two of us, I cut the entire recipe in half. My grocery (Meijer) doesn't carry frozen peas and carrots, so I had to buy a bag of each. [Beware!] My grocery also doesn't carry the cheese called for in this recipe, so I used the only "Irish" cheese I could find which was aged cheddar. [Beware] I don't have time to shop at multiple groceries or specialty stores. You'd think I would've said "heck with it" at this point, but I proceeded. As I said, I made the recipe EXACTLY as directed (except I cut it in half). It was just okay. A lot of work for an "okay" recipe. I would advise cutting out the cayenne pepper--it's not needed and seems to throw the flavor profile off. I might also use beef broth instead of water to give the gravy a little more flavor. That's my two cents. Sorry, Chef John. Usually I enjoy your recipes.

Easy Asian Pasta Salad

This has wonderful flavor and is a great change from the typical picnic pasta salad! I left out the bell pepper and added the juice of one lime and a clove of garlic like another reviewed suggested. I will make it again but without the sugar snap peas next time. In my opinion, they didn't fit...literally...they were too big and too crunchy (and I blanched them first). Next time, I will probably add diced cucumber and tomato. But, honestly, you could make it without any veggies at all. Don't be afraid to try this and experiment with the veggies.

Cola Sauerkraut

Made it exactly as directed except I added 2 T brown sugar (mostly for color I guess). I could've eaten the entire dish by myself...and I'm not a lover of sauerkraut...or wasn't until this recipe! Loved it, as did all my guests!

Classic Caramel Corn

I made it exactly as directed. I made MANY batches to give away for Christmas gifts. I made 1/2 cup popcorn in a hot air popper. For baking, I started out using a cookie sheet, then went to a roaster, and ended up with a HUGE stainless steel bowl that I bought at Sam's Club for under $10. It made the process so much easier. I did not find that I had to spray the bowl. I did spray the rubber spatula to make stirring easier. I broke the corn apart as it cooled (it cools quickly). I had so many compliments! I already passed this recipe along to my daughters and this will be included in our annual Christmas baking. Thank you for sharing!

Slow-Cooked Pulled Pork Shoulder

I made it exactly as written. It was spectacular! Tender, moist and awesome flavor. I fished the onions out and discarded. No BBQ sauce needed, in my opinion! I'm adding this to our family favorites! I think my pork roast was about 4#. It makes alot--I would estimate it serves 8 ppl at least. YUMMY!

Enchilada Sauce

I was very skeptical about this--even after it was cooked! It's not your typical canned enchilada sauce. However, it was spectacular on the chicken enchiladas I made! I put in 3 Tbs of the hot chili powder and it was plenty! You have to stir constantly until it's thickened. Then I simmered it another 30 minutes to let the flavors intensify while I assembled the enchiladas in the pan. Awesome!

Chicken Enchiladas I

I made this with changes suggested by others. I used one de-boned rotissere chicken in place of chicken breasts. I used 3/4 jar of authentic roasted mexican salsa & 1/2 jar of Taco Bell taco sauce in place of tomato sauce & water. I used a small can of chopped green chilis in place of green pepper. After assembling the tortillas & filling, I poured homemade enchilada sauce (recipe on this site) over the enchiladas and topped with cheese. It was very authentic tasting and worthy of 5 stars. I will make this recipe again.
