This is a great and pretty easy hot beef sandwich. I followed the recipe exactly except I used 1.5 packs of the italian dressing seasoning mix, and based on other reviews, I omitted the salt. I used a 5.5 lb tip roast from Costco, that I cut into 3 big chunks to lay in the pot. I was worried it wouldn't shred easily, but after cooking 8 hours on low in the crock pot, it feel apart. I did use the 12 hour setting on low, but it was pretty much done by 8 or 9 hours. Right before serving, I sauteed some peppers and onions to top the sandwiches with, I also put a dish of hot pepper rings out for those that wanted to add a little kick. I loaded up the buns (use a good quality bakery bun or sub bun, the cheap hamburger buns will fall apart ) with the meat, the peppers, then topped it with some swiss or mozzerella cheese and threw it under the broiler for a minute to melt the cheese. These were very good and got rave reviews from the house full of company I had. The scent of the beef cooking all night in the crock pot is incredible. Go for it, you wont be disappointed.
