Karen's Slow Cooker Chicken Fajitas

So easy and delicious! I threw 2 frozen chicken breasts in with the salsa mixed with fajita seasoning and cayenne sprinkled on top on low for 5 hours. I then added chopped up onion, red, yellow and orange peppers (leftover from a veggie platter). Served with salsa, sour cream, lettuce, tomatoes and cheese. Took the chicken out about 1/2 hr before serving, cut it and mixed it back in. Will definitely make again!

Sauteed Swiss Chard with Parmesan Cheese

I didn't even know I liked swiss chard. Someone gave me a whole bunch from their garden. Made this recipe, and liked it so much I made it every day for a week and a half. Delicious. Thanks!

Restaurant-Style Buffalo Chicken Wings

So good! We put a little less Franks Red Hot in because we don't do spicy, but they weren't at all. Next time we'll use all of it, and maybe more. Baked them at 375 for an hour then broiled them for 2 minutes to make them crispier. Will definitely make again!

Chicken Enchiladas I

Delicious! I poached my chicken in chicken broth for about 25 minutes and shredded it. I decreased the water as per other reviews, but it got so thick that I added it in (with chicken boullion) when it was almost done and let it keep simmering. I used the red enchillada sauce from this site instead of the taco sauce. I added more chili powder and cumin, maybe too much because it was a little spicy for us, but still delicious. Thanks for the recipe!

Jalapeno Popper Spread

Excellent!! I used half sour cream and half mayo, one can of chiles, and 3 jalapeno peppers. I mixed some bread crumbs (will use less next time) in with parmesan/asiago cheese and baked in an 8x8 pan at 350 for about half an hour. Will definitely make again!

Fajita Marinade I

Delicious, and great for camping! I cooked the chicken and put onions, green pepper and red pepper in the marinade with it overnight. I put the sealed ziplock bag into the cooler, and we took it out at the campsite and cooked it in tinfoil. Awesome meal with hardly any dishes! The first time I made it was a little spicy for me. The second time I left out the cayenne pepper, and added some chili powder and cumin. Great either way!! Will try adding some Tequila next time!

Awesome Slow Cooker Pot Roast

I probably shouldn't rate this because it was different than what I ended up making... used 1 can of beef broth instead of mushroom soup and rubbed the roast down with onion soup mix (got recipe for soup mix off this site). Added some water and a lot of garlic. It was good, but I cooked my roast for about 4 hrs on high and it was too long. Oops!

Jimmy's Mexican Pizza

I tried this tonight and everyone liked it! I lots of crushed garlic and organo, and little bit of red pepper flakes . I also toasted the two bottome shells in the oven while it was preheating so it was a little crispier. Nice and easy!

Margarita Cake

Excellent and easy! I used a white cake mix, lemon pudding mix, lime juice for lemon juice, and Cointreau for the Triple Sec (I think it's pretty much the same thing?) I baked it in a glass 9x13 pan at 325 degrees for 45 minutes. I wanted to decorate it so instead of using the glaze, I used a prepared vanilla frosting and just threw some tequila and contreau in the icing. It was easy to work with and turned out great. I think it's my new favorite cake! Thank you for the recipe

Focaccia Bread

Thank you for saving my dinner! I had a recipe all picked out and put it in my bread machine only to find out that the dough cycle would be 2 hours... I had to be at dinner with the bread in 1.5 hrs. I isprinkled it with parmesan cheese (powdered, it's all I had) and mozza. Served with lasagna. It was great!

Basic Baked Spaghetti

simple and delicious! I used ground turkey instead of ground beef and put cheese in the middle as others suggested. I used about twice the amount of sauce. The leftovers were fantastic!

Baked Slow Cooker Chicken

Very good and super easy. Tried it the first time with chicken broth and veggies and the chicken was moist but the skin got soggy and was not edible so we lost all the spices. Made it again with the tinfoil, and broiled it for about 10 minutes after just to be sure and it was excellent!

Deviled Eggs

They were pretty good, and maybe I shouldn't take off a star because I used Miracle Whip instead of Mayonnaise. I decreased the sugar but they were still too sweet. I would leave out the sugar completely if using Miracle Whip.
