Chicken and Corn Chili

Reviewed: Jan. 23, 2011
This is the best chicken chili recipe I have tried. I doubled up on the spices and added a chopped jalapeno and a can of green chilis. This is a great healthy, hearty chili for a cold winter's day.

Andy's Spicy Green Chile Pork

This was great! Even better the next day. I added two serranos and two jalapeños. I served with pepper jack cheese and sliced avocados on flour tortillas.

Egg Sandwich

Reviewed: Jan. 21, 2011
I thought this was dry and a little bland. Next time I will try adding some spices and maybe a little low fat butter. I had never microwaved an egg but it turned out perfect.

Cabbage Fat-Burning Soup

Reviewed: Jan. 17, 2011
I made this soup because of all the 5 star ratings and because it was low in calories. I did not care for this at all. I thought it was extremely bland.

Grandma's Slow Cooker Vegetarian Chili

Reviewed: Jan. 12, 2011
I am giving this recipe a 5star rating because it has the best base for a veg chili that I have made. Like many reviewers I left out the oregano and basil. I added 3 tbsp chili powder, 1 tbsp cumin and 2 tsp cayenne pepper. Wonderful. I will make again and again. Thanks!

Mini Pumpkin Butterscotch Muffins

Reviewed: Dec. 28, 2010
I was very please with these muffins. They were incredibly moist which is not always the case with mini muffins. I love the pumpkin & butterscotch combination. I will make these again & again.

Chicken Chili Soup

Reviewed: Dec. 3, 2010
Very good soup. I used three cans of kidney beans, 2 cups of corn and I used rotel tomatoes in place of the diced tomatoes and three in a seeded, chopped jalapeno. I like the calorie content as well

Sour Cream Turkey Enchiladas

Reviewed: Nov. 22, 2010
I made these with turkey left over from A/ R Slow Cooker Turkey Breast. They have GREAT flavor and I will definitly make them again. When I began preparing the recipe I put the tomatoes in a strainer to drain and continuously "shook" the strainer while making the rest of the dish. My problem was that the enchiladas were soggy and when I plated them the tomato topping slid right off the top. Next time I will use 14 oz diced tomatoes and fresh tomatoes for the remaining 14 oz. Again, great flavor and good for leftover turkey.

Hash Brown Breakfast Casserole

Reviewed: Sep. 8, 2010
Thanks, Candice for a great recipe. I made for friends at the lake over Labor Day. I used potatoes O'Brien and will try hash browns next time. Didn't change a thing other than add some garlic powder (which I pretty much put in anything!). Served with bisquits and everyone loved!

Very good. I prepared the mousse as directed and piped in to phyllo cups as other reviewers suggested. I topped 1/2 with a few capers and the other half with fresh chopped dill. Very elegant presentation and so eary and quick to prepare.

Thai Shrimp and Cabbage

Reviewed: Jan. 23, 2011
This was easy, fast and delicious. I like that the recipe is written for one serving. I added additional onion and garlic to the cabbage when I was cooking it and threw in a chopped jalapeno for a little more heat. Other than that, followed recipe exactly as written. Great.

Boilermaker Tailgate Chili

Reviewed: Feb. 18, 2010
OUTSTANDING. I have won first or second place in an annual chili cook-off three years running. The only change I make (since I am from Texas) is to replace the beans with seasoned fajita meat that I cut into bite size pieces.

Cajun Appetizer Meatballs

Reviewed: Feb. 18, 2010
Great appetizer for a Mardi Gras dinner party. I made the meatballs the night before and was not too impressed but after I added the sauce the next day, I really enjoyed them. I believe another reviewer suggested trying them over egg noodles for an entree dish which I will try next. want
