Oustanding recipe - just as written! I served it Christmas Eve and one of my guests called and was making it two nights later. I did add fresh chopped basil after cooking.

Cajun Chicken Lasagna

This was wonderful! I made it for a Mardi Gras dinner party. I did triple the vegetables and probably doubled the mozarella cheese as I did sprinkle between the layers. I intended to make the alfredo sauce myself but was running short on time. I used the sauce sold in the refrigerated section of the grocery and it was wonderful in the dish. I highly recommend!

Cajun Appetizer Meatballs

Great appetizer for a Mardi Gras dinner party. I made the meatballs the night before and was not too impressed but after I added the sauce the next day, I really enjoyed them. I believe another reviewer suggested trying them over egg noodles for an entree dish which I will try next. want

Sloppy Joes II

I have made these more times than I can count. Delicious. I generally double the vegetables and make a little more of the ketchup, mustard and brown sugar sauce. I also serve open face with melted sharp cheddar on top. Great comfort food and not loaded with fat and calories.

Amish Macaroni Salad

My favorite side dish for a bbq. The only change I make is to reduce the sugar from 3/4 cup to 1/4 cup. Highly recommend. I dream about this macaroni salad!!

Boilermaker Tailgate Chili

OUTSTANDING. I have won first or second place in an annual chili cook-off three years running. The only change I make (since I am from Texas) is to replace the beans with seasoned fajita meat that I cut into bite size pieces.

Carrot cake is my absolute favorite cake and this is my absolute favorite carrot cake recipe. I follow the recipe exactly but don't add the pecans in the frosting.

Italian Sausage Soup with Tortellini

One of my favorite soup recipes. I generally make it in the winter and use canned tomatoes since tomatoes aren't as good in the winter. I top the soup with parmesan cheese. Yum!

Vegetarian Korma

The first Indian dish I have ever made. I am leary of many spices in Indian dishes but I really enjoyed this. I followed the recipe with the exception of not adding the potatoes and I did add shrimp. I also substituted coconut milk for the half and half as other reviewers suggested. I used red curry - I never know what type of curry these recipes call for - yellow, red, etc. I will make this again.

Broiled Tilapia Parmesan

GREAT! I use the same amount of toppings called for here with 1 lb. tilapia. This dish, wild rice and a vegetable is probably the quickest meal I can make that I would definintly serve to company.
