Ashley's African Peanut Soup

There are only two people in my household, so 20 servings would have been overwhelming. I scaled it down to six servings and followed the recipe exactly. Very good flavor, a little mild for our taste. But there is no way I could get six servings from this version. A skimpy four would be more accurate. Or a generous three. I did notice another reviewer made the same observation about serving count so just be aware that you cannot serve 20 people with this recipe as written.

Jicama Zebra Fries

Had a ton of jicama left over and when I found this recipe, I thought, "What do I have to lose?" I followed the recipe exactly, microwaved it 4 minutes to start, then checked at 2 minute intervals. I squirted a little cooking spray on the "fries" after they were done, and lightly salted them. The fish I served them with had a nice tomato-ey sauce, and this really made the "fries" yummy. So maybe ketchup would not be amiss. I will definitely make again when I have jicama left over.

Al Pastor Barbeque Sauce

This was a culinary adventure. And the result was very tasty. Here is what I did: I used 5 New Mexico Chiles and 5 California chiles because I was afraid of the heat. Be sure to wear gloves while working with the chiles and don't touch your face. I could not find plain mango juice, and I did not feel like making my own, so I used mango nectar. (Nicola--was this a deal breaker?) Then I pretty much followed the recipe as written. I must say that after the week was over, the onions were pretty pungent. I ended up with a little over 1 quart of sauce. Slathered it on pork ribs and they were very good. I still had plenty left over and I poured the remainder into ice cube trays and froze. I could not tell any difference between, say day 3 and day 7 in the refrigerator, so if I make this again, I might just let the mixture sit in the refrigerator for less time.
