Delicious Ham and Potato Soup

Yum! After looking for the perfect potato soup recipe for years, this is it! I had to make a minor adjustment and use half the amount of butter and flour (dietary restrictions), but the consistency and flavor were not impacted at all. It's wonderful as written and perfectly seasoned - I have often felt other recipes were missing something.

Chicken Tortilla Soup V

This has become one of the go-to recipes in my kitchen for a quick and flavorful dinner. The recipe is delicious as written, but my personal "tweaks" include adding one can of drained great northern beans, substituting a can of fire-roasted, salsa style tomatoes in place of the salsa, and omitting the onions. Several reviewers have commented about the directions for cooking the chicken - I simply cooked it in the soup pot with the olive oil until done, then added the spices and remaining ingredients. Thanks for a keeper!

French Bread

I am quite impressed with how this bread turned out! I did use only five cups of flour based upon the consistency of the dough. (The recipe does imply that you should only add flour until the dough cannot be stirred.) Good work!

Grilled Venison Backstrap

This was delicious! Just remember it calls for apple cider, NOT apple cider vinegar. I have never liked venison until I tried this recipe - it removes all gamey taste. When the bacon was cooked through, the steak was perfectly cooked to our liking (medium well). I've also tried this method with chicken and it was fabulous! Thanks for a great recipe!

Good New Orleans Creole Gumbo

This was a lot of work but truly worth it! We used smoked sausage instead of andouille (as per our taste preference) and also added some chicken. The results were just delicious! I believe it is the cooking of the roux for the appropriate amount of time that makes this recipe so much better than others. We also added some cooked rice when serving. It is even better after it sits.

Basil Shrimp

Wonderful! I have never had much luck with grilling shrimp, but this recipe was delightful and very easy to pull together. I reduced the mustard to 1 tablespoon and marinated the shrimp for 30 min as suggested by other reviewers. The fresh basil adds a delicious flavor - use fresh if at all possible. I purchased shrimp that was already on skewers and marinated it in a large dish - the flavor was equally as good and it made the process a bit simpler. If you enjoy shrimp, this is a must try!

Classic Goulash

Yum! This was a very good recipe - I used one chopeped green pepper and one onion in place of the two onions called for in the recipe. I also added 1 teaspoon paprika, additional soy sauce, salt and pepper. This is a keeper and one to share! We enjoyed it with shredded sharp cheddar cheese.

Grill Master Chicken Wings

I baked the wings for 30 minutes in a 350 degree oven after removing from the marinade and before placing on the grill. This expedited the grilling time to under ten minutes with excellent results.

Perfect Sesame Chicken

Not bad overall, but we felt that something was missing. The batter for the chicken was very flavorful, the sauce just seemed flat. I followed other reviewers suggestions and used brown sugar and lessened the amount but ended up adding more because it needed something. Next time I will try adding either some zing or more dark soy....

World's Best Lasagna

Superb recipe. The sauce was sweeter than we prefer, so I omitted the sugar on subsequent cookings as we enjoy a "tangy" sauce. It gets rave reviews by everyone who eats it. I've also stuffed shells with the cheese mixture and topped with the sauce with excellent results.

Easy Sugar Cookies

I followed the tip to soften the butter to the point of "mush" - cookies were perfect. They are a great standard sugar cookie - easy to make, crisp on the outside, soft in the middle. Mine took 10-12 minutes to bake on insulated pans. They did double in size when cooked.

Caramelized Baked Chicken

Sauce had a great flavor. I cooked on the stove top for 20 minutes and thickened with some cornstarch mixed with water at the end. I gave four stars because the sauce would have been too thin if this had not been done. I made with chicken tenders as suggested by others - I'm sure it would have been even better caramelized on wings with skin.

Red Velvet Cake I

Read other reviewer's tips before baking regarding the use of oil in place of shortening. I make red velvet cake several times a year and resorted to this recipe when I couldn't find my usual one - I chose it because of the high rating. This is the only cake recipe I've made in thirty years of baking that did not turn out well. The flavor was good, but the cake would not "set" in the middle, resulting in a product that was overbaked on the edges. I suspect it is the use of shortening in the recipe - perhaps results would be better if it were melted first.

Old Fashioned Coconut Cream Pie

One of the best coconut cream pies I've ever eaten. My family has tried pies from all over and decided this was the best by far. I followed the suggestions of other reviewers and used cornstarch in place of the flour and one can coconut milk with enough half-and-half to make the three cups of liquid called for. My compliments to Carol H. on this submission!
