Chocolate Wave Zucchini Bread

WOW! We call it "Zed Bread" and it has become a staple in our home. My nine year old requests it all the time. Pretty impressive from a kid who says that zucchini makes him gag.

Dark Chocolate Cake II

Wow! Best chocolate cake that I have ever made. I only intended to make two little changes to the recipe. I only keep whole wheat flour in the house so that was a given and I planned to use almond oil but realized too late that I only had 1/4 cup so I also had to use 1/4 cup of butter. The cake took significantly longer to bake than I anticipated but it was worth the wait. A beautful, dark, dense, moist cake that was a wonder to behold once it was frosted (chocolate mocha cream cheese frosting) and piled high with berries. The perfect Valentine's cake!

Chocolate Cream Cheese Frosting

Whoops! I started to make this frosting before I realized that I didn't have nearly enough icing sugar. I substituted sem-sweet chocolate squares instead of the unsweetened ones and only added about 1/2 cup of sugar and it turned out great. I love a flexible recipe! I also added a heaping teaspoon of instant coffee as it was going onto a Mocha Chocolate Cake. I also put a little frosting aside and added some fresh blended raspberries for a layer in the middle of the cake. Oh my! The final product got rave reviews. A new Valentine's tradition!

Apple Curry Turkey Pita

An excellent use for leftover turkey especially since my husband never feels that he gets enough curry. Super quick and easy to prepare. I ran out of lemon juice and simply used orange but probably should have used grapefruit for a brighter taste. We served it in wraps and had yam fries on the side. Delightful, will definetely do it again.

Dijon Crusted Halibut

We really liked this recipe and will definetly use it again. Halibut is a delightfully light fish which could be easily overpowered. Since all Dijon Mustards are not created equal I would highly recommend tasting the one you are using and adjusting the recipe so that it doesn't take over all of the flavour. Lunch leftovers were just as delightful as the original meal.

Absolutely Fabulous Greek/House Dressing

A wonderful creamy greek dressing! Not all Dijons or Red Wine Vinegar are created equal so I knew to watch the Dijon as mine is quite spicy and I reversed the ratio of Oil and Vinegar as this would have otherwise been much to tart. The dressing emulifies (thickens) beautifully and smells divine. I used fresh garlic and minced green onions instead of the powdered options. This dressing goes a long way as the flavour is delightfully intense.

Authentic German Potato Salad

I made this on mass for a church fellowship and it was devoured! I think I'd go a little lighter on the vinegar next time only because I would have been able to eat more if it had bitten me back a little less. :)
