Mexican Rice II
First time making Mexican rice. This was a wonderful recipe. It was served as side dish to compliment enchiladas. I added 1/2 can of corn niblets for color and texture. YUM! Thanks, Mommyto2!

Apple Pie by Grandma Ople
Perfect. I used 8 apples and they all fit in my 9.5" glass pie pan. I added 1 tsp cinnamon and 1 tsp of vanilla extract. I tossed apples in sauce and then poured into bottom crust, reserving just a bit to brush on top. I sprinkled the top with cinnamon sugar. I baked exactly as stated in recipe and had no trouble with pie burning as others had found. My first pie and it was beautiful!

Fabulous Foolproof Lasagna
This turned out great! We're not meat lovers, so I only used 1/2 lb of Turkey Italian sausage, and added 4 garlic cloves and a small onion while browning. I used a jar and a 1/2 of sauce total, adding one jar to the sausage mixture. I coated the bottom and the final top layer with the remaining sauce. I slightly overlapped the lasagna noodles, using 4 per layer - 16 total. I used regular lasagna noodles! I like a 6-Cheese Italian blend, instead of plain mozzarella. And broiled on high for the last 5 minutes. My husband said it tasted like restaurant quality! Tons of flavor.
