Janine's Best Banana Bread

A good recipe. Better the next day than right out of the oven. I added a tsp of vanilla and stir-ins such as raisins or wild blueberries. Also used whole grain flour (1 c. WW pastry flour, 1 c. white whole wheat). Very nice outcome.

Not Your Mother's Pumpkin Bread

Great recipe! I made a few healthy substitutions. I used 1 2/3 cup of defatted soy flour, the rest regular flour, 2 1/4 cups of Splenda and 1 cup brown sugar, 1 1/4c egg substitute instead of eggs. Also used dried cranberries and raisins instead of nuts since there is a lot of fat in the recipe. The bread turned out very moist with a delicious cream sherry flavor.

Hot Cocoa Mix

Unlike some other reviewers, I did not need to make any adjustments to the sugar and cocoa proportions. I used a high quality cocoa from the local Bread and Circus, and this seems to make a big difference. Also, I did use Splenda instead of powdered sugar (4 3/4 c sifted). Because so many people recommended a cinnamon kick, I added a tablespoon of cinnamon to the mix. It came out great! I also think you can use 1/4 c of the mix instead of 1/3 to make it last a little longer.

Basil Tomato Pork Chops

My husband loved this recipe. Here are my variations: I only had 3 pork chops, so I used a 14oz can of diced tomatoes, a whole onion, and the full amount of garlic and basil specified. Didn't have a pepper on hand, so I left it out, but I want to try it next time. I cooked the onion with the pork the entire time and added 1 tsp of fennel seed. With the fennel seed, it smelled like Italian sausage.

Cinnamon Pear Frozen Yogurt

Fabulous flavor! I made mine with pears in light syrup, Splenda, and low sugar, fat-free yogurt. I was very pleased with the results as were my guests. Will definitely be making this again.
