Chicken Saag

This is amazing, if not exactly what you may get in an Indian restaurant (it is better!). I halved the recipe, using 16 oz. bin of organic spinach from Costco, and chopped finely (versus using the blender after cooking). Used the Garam Masala recipe from this site, and used boneless chicken breasts. Served with basmati rice, I got 5 servings from half the recipe. It took nearly 2 hours, but I'll gladly make it again!

Cheesecake Lemon Bars

Wonderful! I took these to a party, cut into 1.5" squares, and they were a hit. I had trouble pressing the crust into the pan, and gave up half-way up the sides, which turned out to be the perfect height! The recipe also took 45 minutes to bake, not 30, but might have been my oven. Will definitely use again!

Lemon Garlic Tilapia

This was the easiest recipe for fish I've used, and maybe the most delicious. I also substituted olive oil for the butter, and sauteed in my electric skillet. This fish looked even better than the photo!

Easy Garlic Broiled Chicken

I halved the recipe, used olive oil instead of butter, and marinated 2 chicken breasts for an hour, then placed the on the George Foreman for about 7 minutes. The best grilled chicken I've ever made!

Green Onion-Parmesan Mornay Sauce

This was easy and just incredible! Served it over medium shell pasta with grilled salmon and broccoli. It was so good, everyone coated the whole meal with this sauce!

Blueberry Oat Waffles

Left out the pecans, and made a blueberry topping which wasn't even needed! These waffles are fantastic all by themselves!

Blueberry Coffee Cake III

Fabulous! I baked in an 8x8 pan, which made it very thick, and I used no pecans. Best blueberry coffee cake we've had - a re-do!
