Baked Rice and Vegetables in Broth

A great base recipe for any oven cooked rice meal. I just love the way the brown rice brings out the flavor of everything else. Perfect for those evenings when there is just too much to do besides cooking, as long as the veggies are cut in advance.

Cabbage Roll Casserole

I don't know what I did wrong, but there was way too much cabbage and meat to fit in one dish !!! Tasty though.

Asparagus Ham Dinner

My husband is a "tomato-meat sauce only for pasta" and I put a plate of this in front of him, he loooked at it weirdly... ate it... and asked for more ! A keeper !!

Spruced Up Mashed Potatoes

Great way of using up left-over cauliflower as well ! And makes the taters nice and fluffy, without having to add too much fat.

Crab Casserole

I modified this recipe quite a bit and it turned out wonderful. No noodles. Instead of mayo, 1/2 cup of non fat sour cream and 1/4 cup of non fat mayo. Instead of bell peppers, I put asparagus (asparagus and shrimp are a no-miss combination). Yummy and extra low cal, witout the noodles.
