Italian-Style Round Steak

Very tasty. Easy Sunday dish. The sauce thickened pretty well. I made this with elk round steak and it turned out great. I left out the basil and oregano and it was still very savory.

Glazed Corned Beef

Great St. Patty's Day corned beef. I don't make this very often, but it is the perfect twist on corned beef. I halfed the glaze and I accidentally put the glaze on before cooking for two hours and it was still good. Great with sauerkraut!! Next time I will make as directed, the glaze was delish.

Easy Southwestern Salad Dressing

Super easy dressing.Needed a quick dressing for a southwest meal and this fit the bill. Threw together a salad with some romaine, canned corn, canned black beans, avocado, and crushed tortilla chips. This dressing was wonderful.

Beer Brats

Not bad...not bad at all. I'm not usually a huge fan of brauts but these turned out pretty darn good. I used the cheapest beer I had on hand, 2 cans of Coors Light and used a jumbo pack of 12 Johnsonville beer brats. I also doubled the onions. Tossed everything in a slow cooker and let it sit for about 4 hours. I took the brats out of the "beer bath" and cooked them on low on the grill. This gave them better color, if not they don't look very appetizing. The grilling also gave it a little sweetness. I also took the onions out of the "beer bath" and sauteed a little to carmelized. Hubby liked them pretty well, but to my surprise my picky eater gobbled it up.

Dairy Free Chocolate Pudding

Great alternative pudding! My 3 year old is allergic to dairy and soy, this recipe worked with oat milk. I watered down the oat milk a little to and cut some of the sugar. To avoid lumping, in a separate bowl I whisked the cornstarch with cool water first. Then in another bowl I whisked the cocoa powder and then combined the cornstarch mixture before putting into the pot. Added the sugar when I was ready to start cooking. Whisked constantly over heat until it started thickening. Will use this base for fudgesicle this summer. Thanks!!

So good! The longer it sits the better. not a huge fan of parsley so I subbed cilantro (a favorite flavor of mine) Added raw chopped cauliflower for extra texture.

Halloween Jack-o'-Lantern Beef Pies

This is great and hearty. Instead of putting the ready made dough in muffin tins. I stretched each by hand making a circle, spooned a little of the meat mixture and then folded the dough over making it a little hot pocket. (Don't forget to cut slits for venting.) It was even good the next day. The meat mixture is a good served over pasta or rice too. Really easy and fast!

Excellent Venison Soup

Great soup if you have a freezer full of elk! I'm not huge on wild game meat, but my husband stocks the freezer every winter. I must say that this does come together very well. I even went back for seconds. I didn't have rutabaga or parsnip on hand, so I left it out. Didn't have the canned tomatoes either so I used the three fresh tomatoes I had and 2 cans of V8 juice. Will definitely make again!
