Southwestern Chicken and Rice Casserole

Great recipe. I like to try a recipe as written but I didn't have a couple of called for ingredients and made the following changes. I used 8 boneless thighs instead of breast and a can of drained Ro-Tel (tomatoes and green chills) instead of the salsa. I also used 1 cup of rice and an extra 1/2 cup of water. It came our very good. The chicken was very moist and flavorful and it was a visually appealing dish. I will definitely make again.

Two Squash Casserole

Great! My changes: I used half zucchini and half yellow squash, cut the butter in half and used panko bread crumbs (all I had on hand!) The recipe came out terrific. I served it on a weeknight along side braised short-ribs and roasted cherry tomatoes. Great meal! I have saved this recipe and will be making this again.

Best Chocolate Chip Cookies

Made this recipe twice and shared with a friend. They are really very good cookies! I have tried both dissolving the baking soda and just adding it and could tell no difference. I have my butter on the counter as I type softening up for batch number 3! NOTE: I use milk chocolate chips (Guittard)

Extreme Banana Nut Bread 'EBNB'

I have made this over and over again. I always cream the butter and sugar. (using a KitchenAide) I do use pecans, but that's the only change I made. This is my "go to " recipe...it is very good and NEVER lasts! I'm making it today for a friend...I'll keep one loaf and give the other away. It's really the only way to keep from eating both loaves in very quick succession!

Delicious Pumpkin Bread

Followed this recipe---almost exactly. I used pecans instead of walnuts. I used 2 9x5 loaf pans and 2 12count mini muffin pans. To prep my pans, I used pam, then a mix of flour and sugar coat. Other than that...the recipe was followed as written. I was impressed. The bread was moist and tasty. My husband, who normally does not like "sweet breads" thought it was great! I'm putting this one in my recipe box!

Chicken and Dumplings I

One of my favorite recipes. The dumplings done in this way (as opposed to "dropped" are wonderful. A satisfying and comforting dish! (you can add some fresh or frozen veg, if you like...I've tried with peas, carrots and mixed veg.)
