Slow Cooker Italian Beef for Sandwiches

I normally distain beef, but I cook it for my meat loving hubby. I must say though that the flavor and tenderness when this was done totally blew me away! I have tried so many times to make a good roast, this is the best I have ever had.

Fudge

I used 16 oz dark chocolate , no butter and 1 oz unsweet bakers chocolate and cashews...rich and elegant,...I wonder if the butter would have made it even better! Also, I lined my pan with greased foil making it easy to flip it out of the pan onto a cutting board. Peel off the foil and cut with perfection using a rocking pizza cutting blade.

Thimble Cookies

Good cookies, no need to punch down center 2x though, just make it really deep the first time. I used a wine cork covered with foil and pushed up the sides around it to really mold a deep well so you don't have to take them out after 5 mins. Also putting jelly in a squeeze bottle or even a pastry decor bag makes quick work out of filling the centers.

Coconut Macaroons III

I thought these were good but they didn;t brown and were not quite chewy enough so I added one egg white to the recipie. I also coated the bottoms after baking with a dark choc ganache....OMG! Heavenly!

Thai Chicken Curry in Coconut Milk

Good recipie but very short on Flavor. Recommend adding 2 Tbls Chinese Hot Chili Sauce and a Tbls of fresh ground ginger. Also up the curry paste to a Tbls. I also substitued Lime for the Lemon zest and juice. Yum.

Baked Leeks

Very good, we had never had leeks before as a side dish and we were pleasatly surprised. I would like to find a low cal way to prepare and something other than soup for summer. This was really good though with no variations to the recipie.
