Baked Mashed Potatoes

Yum! Guests loved this. I used 1 TBSP onion instead of a whole one. I also added about 2-3 TBS of horseradish sauce --gave it a little kick. Easy to prepare ahead, which is so helpful for the holidays.

not my favorite -- very heavy. Used fresh shrimp and scallops. Went lighter on the Old Bay. Still--seems to thicken quick as it cools on your plate.

Slow Cooker Beef Stroganoff I

Yum- tasted better on day 2 after being in the fridge. Added the onion soup, pint of sliced/cooked fresh mushrooms (a must - right before serving) and dollop of sour cream as suggested.

Southwest Stew

Very good -- I also added more tomatoes -- did 1 lb beef + 1 chopped/cooked chicken breast (vs. 2 lbs beef). Added black beans. Another great addition - add a packet of Ranch Dressing mix (powder-not dressing) - makes it less watery. Also works in a slow cooker on low for a 3-4 hours (then you don't have to precook the chicken)

Blueberry Zucchini Bread

Amazing! If you're short on time, use mini-muffin tins; baking is done in 15 mins. I cooked at 325 degrees convection (375 reg oven) for 15 minutes. Loved the 1/2c oil, 1/2 c applesauce & 2 c sugar + 1/4 brown sugar option. My kids LOVE these and the mini muffins are perfect for them-no slicing. No one detected the zucchini.

Baked Salmon Fillets Dijon

Great recipe! Couldn't be easier. I substituted crushed cornflake for the bread crumbs. Added some crunch. Would probably lessen the butter next go around.

Janet's Rich Banana Bread

Just pulled it out of the oven...it's fantastic! Love the sliced bananas. I added a 3rd (mashed) banana as another reviewer suggested--great tip. Very moist.
