Oatmeal Pancakes II

Really YUMMY! I make pancakes practically every weekend. I ground the oats. Mixture was a little thick, so I added 2/3 c. milk to original recipe. Cooked on med. heat. Served with homemade berry syrup. Light, fluffy and a huge hit! I'll make these again.

Truck-Stop Buttermilk Pancakes

Wow! These are perfect! I made a few changes, based on what I had available. We didn't have buttermilk so I added 5 T of lemon juice to 5 cups of milk as a substitute, and omitted 1 1/2 c. milk. Also, I used 4 cups all-purpose flour, and 1 c. wheat flour. The pancakes are as good as any pancakes I ordered at a restaurant. This recipe is a keeper.

Royal Icing III

This sets up great. Suggestions: Add the cream of tartar to the egg whites instead of adding it to the sugar. Cream of Tartar is used to help "stabilize" or stiffen the egg whites. Note: I modified the recipe a tad by using 1/2 tsp. of cream of tartar (1/4 tsp. in conf. sugar and 1/4 tsp in egg whites). Use a quart size zip lock bag to pipe onto the cookies, and try adding 1 tsp. of vanilla extract to bring up the flavor a little bit.

Banana Banana Bread

Outstanding! I actually had to cook the bread for 20 mins. more than called for in the original recipe. However, it was worth every exta minute. This IS the best banana bread I had EVER had.
