Mother of picky 5 year old daughter who hates to eat anything twice (except for Mac n Cheese). Type II diabetic who tries hard to make healthy dinners that also taste good.
My favorite things to cook
Anythink in a slow cooker, rice, pasta, veggies I know my daughter MIGHT eat without a fuss, oh and this Dill Pickle Meatloaf. If you like pickles (my daughter does) you'll love this recipe.
My favorite family cooking traditions
Haven't really got any. Some years I make my mom's prize winning banana-walnut bread and sometimes during Christmas I bake her chocolate balls and snickerdoodle balls.

not reading the measuring spoon right and putting 3 times the amount of salt in anything.

Cheesy Chicken Meatballs
I made these just last night and, wow, they are delicious! I couldn't find ground chicken so I subed ground turkey but everything else I did to a T. I did notice a few things that weren't quite right, like the 2 eggs and the oil but they still turned out fine and moist. then I read the first review which was Rachel's corrections and it was on par with what I am thinking of doing next time. the red pepper flakes, I think, were a bit too overpowering but they calmed down the next day. This is definately a keeper in my recipe book :)

Individual Vanilla Cheesecakes
I have made this before and it is a hit with my kid! It's better than having to buy or borrow a spring form pan and waiting for an hour or so for a cake to bake and then chill. What's best is, you can decorate your own way and have a different cheesecake every time!

Dill Pickle Meatloaf
Ok, My daughter, who is a 5 yr old pickle freak LOVED this. She took seconds (eating and getting more) to my first serving. I don't paticularly care for the actual pickles but I love pickle juice and now I have a reason to keep pickle juice in my frig ;) Thanks for posting this recipe.
