I made this baked scallop recipes. It was good, but I used unsalted butter because that's all I had. Unsurprisingly, it needed more salt! In general I would just up the spices a bit and decrease the topping, but otherwise recommend this recipe.

I made that on Friday, so it counts for last week, then on Sunday (this week!) I make an apple crisp bake based roughly on this recipe. But I changed it to make it a apple-raspberry crisp:

  • 4 apples - peeled, cored and chopped
  • 2 tablespoons lemon juice
  • 3/4 cup red raspberry preserves
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 cup granola cereal

Directions

  1. In a bowl mix the apples, lemon juice, preserves, flour, and cinnamon; Transfer to a greased 8-in. square baking dish. Sprinkle with granola. Bake, uncovered, at 350 degrees F for 40 minutes or until filling is bubbly. Serve with ice cream!

I made it because we had 4 apples that needed to be used asap and some granola cereal that I wasn't super excited to eat on its own. If I were to do it again I would add brown sugar to the granola on the top. But it was easy and and fun to do with my daughter Kaylee. And it's pretty healthy!

Try dusting the potatoes with a little bit of parmesan cheese in between the layers. It adds a milder saltiness and a little more flavor without getting too cheesey.

Daiseyland, I don't think you read this correctly. Scallops. Not scalloped potatoes. (although I like those too)
