My first roast chicken

I roasted a whole chicken for the first time this weekend! I did it as a "Rapid Roast" ala this recipe. For seasoning I stuffed it with garlic and rubbed it with a mix of olive oil, dry basil, paprika, pepper, oregano, salt, and garlic. It took longer than the recipe said, but that was due to the fact that the chicken had not thawed 100%. I cooked it breast-side down, which was supposed to help retain moisture in the breast meat.

Overall it was good. It was moist, everybody served seemed to enjoy it. I served it with broccoli and brown rice. It wasn't the most flavorful thing I have ever made. Next time I think I will try putting the rub under the skin. Perhaps some sort of gravy would be a nice addition.

What I really liked was how easy it was. I can't believe I've been afraid of whole chicken my whole cooking life when it was really quite simple. Live and learn!

Looks tasty! After my last chicken debacle (let's just say it did NOT turn out well) the DH is on "Chicken Duty" from now on :)
