Baked Ziti I

I've made this several times. Sometimes I do exactly as written and sometimes I change it up a bit. My changes-- 1# Italian sausage casings removed instead of ground beef. 1/2 ricotta and 1/2 sour cream. Add about 1/3 c red wine to the sauce. Either way, this is a great baked ziti.

The Best Rolled Sugar Cookies

I love this recipe. I used it at Christmas time and am using it again to make Easter cookies for my grandson to decorate. I divide the dough into 3 sections and wrap each in plastic wrap to chill, keeping the others in the fridge until ready to use. I think having a nicely chilled dough is the key to rolling out a great cookie.

Easy Chicken and Biscuits

I'm not sure why people thought this was watery. I used exactly what the recipe said. I used a combination of mixed vegetables and broccoli. I did add 2 diced potatoes and added a little onion powder and a little dried sage. I used a little less than 1c of milk but added about 1/4c of white wine. It was a great weeknight dish.

Reuben Crescent Bake

Italian Spaghetti Sauce with Meatballs

This was a very good recipe. I made only a couple of alterations. I added a splash or red wine just because I don't think it is red sauce without a little red wine. Instead of dried basil, I added Italian spice which is a blend of basil, thyme, etc. I am not sure why a reviewer felt this recipe was overly sweet. In fact I like my sauce a little sweeter than what this recipe called for. The meatballs were very good. They reminded me of the ones made by many of the Italian cooks in my hometown. I think they always put them directly into the sauce and never browned them first. I will definitely use this recipe again. 12/8/14 I just made this sauce again. I used fresh herbs instead of my usual Italian blend. I used about 2 tsp fresh oregano and 3Tbsp of fresh basil. This really kicked up the brightness of the sauce.

Creamed Chipped Beef On Toast

This is a fine recipe with a few tweaks. I melt the butter in the top of a double broiler (on the stove top). When the butter has melted, add the dried beef (pre-rinsed). Cook the beef in the butter until it curls on the edges. Remove from heat and stir in the flour. Place the mixture over boiling water in the double broiler over med heat. Slowly stir in the milk and continue to cook until desired thickness. I add a Tbsp. of A1 sauce at the end of cooking. We serve this over biscuits.

The Best Banana Bread

This is a great recipe for a simple, honest banana bread. All I add is 1tsp of vanilla and 1/2 tsp of salt. Moist, dense and delicious.

Chicken and Rice Pot Pie

A good comfort food. I poached the chicken first and used the poaching water as the water in the recipe. I also added a bit of thyme and some shredded fresh carrots. I will definately make this again.
