Delicious Ham and Potato Soup

Vegetarian Korma

This was pretty good! I did have issues with the potatoes taking a long time to cook, next time I will parboil them first. I added chicken broth to deglaze the pan since it was getting burned bits on the bottom and then covered the pan for about 25 to cook the potatoes. Since I added stock, I cut the cream by half, but I would like to try coconut milk next time. I also added a bit of cayenne pepper for heat :) Yum!

Pecan Breaded Chicken Breasts

This was excellent! To speed up the process I pulsed the pecans in the food processor and pounded the chicken thin for faster cooking time. Thinner chicken breasts also prevent the breading from burning. After chicken is cooked, I recommend deglazing the pan with broth/water and pouring it over the dish. We ate this with wild rice and peas with sauteed shallots, yum!

Andrea's Pasta Fagioli

So I thought this recipe was just okay. I followed the recipe to a "T," but was unsure of the canned beans. Every recipe I've made calls for drained, rinsed beans so I did the same for this as well since it did not specify. Once the pasta was added, this was definitely NOT a soup :) Very thick, not chunky as described since the pasta and beans are small. I would honestly describe it as very similar to homemade spaghetti O's, sorry :( If I were to make this again, unlikely, I would use half the pasta and double the beans for a chunkier texture. I found the ditalini pasta at a local Italian market. This picture in this recipe is not really similar to how it comes out unless you use macaroni and add chopped tomatoes (which I didn't).

Butternut Squash and Turkey Chili

This was really good! I didn't make any changes to the recipe and it came out great. The butternut squash adds a bit of sweetness to the chili, so no sugar is necessary unless you like sweet chili. We ate this as a meal with homemade tortilla chips and I would say it serves about 6 servings. Very hearty and healthy!

Pineapple Carrot Bread

This was great! I made this recipe as muffins (made about 20) and baked for 23 minutes. I also halved the sugar, doubled the cinnamon and added nutmeg. I made several batches of this for Christmas gifts and substituted canned pears for crushed pineapple since I ran out of pineapple! Came out delicious!
