Banana Yogurt Muffins

Reviewed: Feb. 19, 2014
These were awesome! Very moist and full of banana flavor. I had to use vanilla Greek style yogurt instead of plain as that was all I had on hand and I added only chopped walnuts because I didnt have any raisins. Otherwise followed the recipe. Everyone loved them. Made a second batch today and decided to go a little healthier by using half whole wheat & half white flour and threw in about 2 TBSP ground flax seed. Also replaced the oil (previously used Canola) with 1/2 cup applesauce and added 1tsp vanilla and 1tsp cinnamon. I let the bran soak in this mixture a little longer to make sure it was thoroughly wet before adding the dry ingredients. These were even better than the first batch. Still came out moist and delicious and no one noticed the healthy changes. (Love it when that happens:). Will definitely be making these again. Thanks so much for sharing.

Delicious Ham and Potato Soup

Reviewed: Dec. 1, 2011
This was delicious! I can't believe how fast it came together once the vegetables were chopped.  I took the advice of other reviewers and added carrots, used chicken stock instead of water (omitting the bouillon) and whisked in about a cup of shredded cheddar cheese to the flour/milk mixture just before adding  it to the soup. I also suggest tasting the broth before adding salt as mine was perfect without it. Will definitely make this again.

I make this every Thanksgiving and get many compliments. Ive tried other recipes but this one is our favorite. Roasting the potatoes makes all the difference.

Flatlander Chili

Reviewed: Nov. 27, 2011
This is now my "go to" chili recipe. It makes a great tasting base and you can easily adjust the heat by increasing or decreasing the cayenne. My family likes it with Cheddar Cheese goldfish crackers and I put a dollop of sour cream on mine. Great recipe!

Dad's Leftover Turkey Pot Pie

Reviewed: Nov. 27, 2011
Decided to make this tonight to use up leftover Turkey. It was Awesome!  I used "Steamers" frozen mixed vegetables (corn, green beans, carrots and peas in one package) instead of buying two separate  bags of veggies. As with some other reviewers, my sauce thickened up a little too much when it started to bubble so I added about 1/4 cup more chicken stock. Also, I tasted after stirring in the spices and it was Ok but I didn't have any celery salt and thought it needed something so I substituted Garlic Salt then decided to add a little fresh grated parmesan. That really took it to the next level. Yum! Will definitely make again. Thank you for sharing Rob.

Slow Cooker Pulled Pork

Reviewed: Sep. 24, 2011
I have made this several times for different events and everyone loves it. Someome always asks for the recipe and can't believe how simple it is. The only change I make is to add a bayleaf and some garlic powder with the root beer. I made it once with Dr. pepper instead of root beer and it was just as good. I usually use a sweet BBQ sauce that has a slight kick like Cattleman's Original.
