Mediterranean Chicken

Frankly I had mixed feelings about this dish. My husband really liked it and thought there was a lot of flavor. I felt I had to make too many changes to give it 5 stars and if I could I would have gone 3 ½. I cut the pieces of chicken into bite sized pieces and grilled them in butter (yeah, I know) and the white wine. I also seasoned the chicken at this point which you really want to do or the flavor is a bit weak even with the sauce. I also used canned tomatoes in their juices as another reviewer recommended. It definitely needed the pepper flakes to give a bit of a kick too. Also, the sauce got too dry as it was simmering so I added more wine as needed. I cut the olives into little pieces too so it would mix well with the other flavors and so I wouldn’t get an entire olive in a bite. They really made the dish. But now that I had this chicken mixture how was I going to serve it? So I took a package of dried vermicelli and browned the noodles in butter. Then I added it to one can of chicken broth. By the time the noodles were done the broth was soaked into it was perfect. I served the chicken mixture over the chicken flavored noodles and it was delicious.

Mom's Fabulous Chicken Pot Pie with Biscuit Crust

This recipe was delicious. I used all the ingredients as listed and used fresh herbs from my garden. For the veggies I used potatoes (precooked) and peas because that's what hubby liked. Halfway thru the meal he stops to take a photo and text it to his friend to brag about it. I make pot pie regularly with leftover chix but this is now my fav. Frankly I think it's the thyme that made the difference. The sauce was unbelievably tasty. The only reason I didn't give it 5 stars is because of the biscuits. I had to cook them until almost overdone to get them cooked on the bottom. Next time I'll do what another reviewer suggested and cut into small strips. Loved it!

Super Summer Salsa

This is amazing! As others suggested I cut the sugar in half. I also popped the vinegar and sugar in the microwave for a few seconds to melt the sugar. My husband suggested adding something to make it kick but I liked it as is. I only used one can of corn so it wasn't overpowering. I wanted to add the cilantro as others suggested but when I went out to my garden to cut some it was already too late in the season. The night before I made a lime and cilantro rice for a side dish. For lunch the next day I put this salsa over the rice and heated. OMG!! It was delicious! What a great recipe you will be able to use a million ways. Loved loved loved it!

Brown Sugar Meatloaf

I HATE meatloaf. However my husband loves it so I decided to make it for him. WOW am I glad I chose this recipe. It was outstanding! Best meatloaf ever. I took the other reviewers advice and substituted seasoned croutons for crackers but other than that I made as stated. I originally cut back on the sugar as others suggested but it was to “ketchupy” so I made it as it was called for and loved it. I actually like my sauce a bit sweeter. But even taking the sauce out of the equation the meat with all the flavors was truly outstanding. Served it with mash potatoes and green beans cause we were in the mood for some comfort food. LOVED LOVED LOVED it! I’m changing my mind about meatloaf!

Maple Salmon

I read all the reviews and followed the directions exactly. Yet I thought this was absolutely tasteless. I used foil as another reviewer suggested both to keep the fish moist and to keep my sauce in tact. But the sauce ended up just running off and even after marinating it just didn’t have enough flavor. Now I must admit that I prefer salmon with a sauce so perhaps the others like it more plain.

Pasta, Broccoli and Chicken

I thought this recipe was just okay. As other reviewers mentioned - not enough flavor. Even after adding add'l pesto and fresh herbs from my garden. It needed something else. I'm always looking for new ways to cook pasta without a cream sauce and this just wasn't it. I wouldn't make it again.

Spinach and Bacon Chicken

I like this recipe and will make it again. However the picture gave me the idea to make it into a pasta dish so that's what I did. I cut the bacon up before frying. I also wilted the spinach in a different pan because I wanted to use the bacon grease to fry the chicken which added unbelievable flavor! I also chose to add some minced garlic at this point and cooked it at the tail end of the bacon. I cut the chix in pieces and then put flour and seasonings in a plastic bag, dumped all the chix in there and just shook it until coated. When I laid the chix in the bacon grease I had to add some olive oil as there wasn’t even of the bacon grease left over. I took the chix out when done and covered. Then I added the wine scrapping up any pieces, added the wilted spinach and heavy cream. Then I added all that (along with the chix I had set aside earlier) to cooked pasta. Delicious! I gave it 4 out of 5 stars because while it was an excellent recipe I felt I really had to doctor it up to bring out more flavor.

World's Best Lasagna

I have been making this same recipe for years with only slight changes. I found it on the box of lasagna noodles a long time ago. However I did add a few ingredients. I like to layer in sliced green olices and sometimes I'll add pepperoni. It's worth the time and effort. Awesome recipe!

Spinach Quiche

This was the best quiche ever! My husband and I both loved it. After reading the other reviews I too made a few changes. I cooked the crust 5-7 minutes before adding the ingredients and so my crust turned out perfect on the bottom. I cut the butter to ¼ cup and…no grease so that worked well. I took the garlic down to 2 cloves and frankly I could have done 3 I think. The spinach I used was fresh so I just cooked it down in a little water and then drained it. Also, the feta only comes in a 4 oz package now so that’s all I used. Lastly I cut the milk to ½ cup and the eggs to 3. It turned out perfectly and it was the first time I ever made quiche. I felt like I needed something with a little texture so I served it with a side salad in a balsamic vinaigrette. Delicious! I can’t wait to experiment more with different ingredients!

Easy Indian Butter Chicken

This was awesome! My husband and I kept saying how great it was all during the meal. I too made slight changes but only because I didn't want all the pots. I cooked the onions and garlic as suggested then I just added the sauce ingredients to that. Then instead of cooking the chicken in the oven I actually covered it with some oil and garam masala (that I FINALLY located at the grocery) and cooked it on the stove. Then I added it to the sauce during the 30 minutes it simmered. Also I added a oinch of curry to the sauce while it simmered. Next time I'll cook the chicken with the garlic and onions and make the sauce all in the same pan. Simply delicious! Thanks for sharing the recipe!

Indian Chicken Curry (Murgh Kari)

I loved this recipe. I'm a huge Indian food fan and I thought this was very authentic. The only change I would make next time (I followed the recipe exactly) is to cut the cayenne pepper by 1/2. Right after I added the amount I thought "wow this is too much" and it was. I want to taste the flavor of the food and this was just slightly over the top. Imagine how hot it was the next day! But you won't be sorry - this is a GREAT recipe!

Simple Garlic and Basil Pesto

Made it exactly like the recipe and it turned out delicious. I saw where another reader waited to add the Parmesan cheese but I didn't and it froze just fine. I didn't have an ice tray so I froze small 1/4 cups of the sauce and then took them out and put them in baggies. Now when I need pesto sauce I just grab a baggie and heat!

Pan Fried Halibut Steak with Light Green Sauce

This is the BEST and EASIEST recipe EVER and the taste is delicious!! I've used this recipe on several types of fish not just the halibut. I think the fresh herbs are the most important and I upped the capers since I love the taste with the cream sauce. I messed up the first time and burned the butter when I cooked the fish so I had to start over for the sauce and it lacked the extra flavor kick it needed so the second time around I was more careful and it ROCKED! I have company coming on Saturday night and I'm making it again.

Yummy Pork Chops

We LOVED this recipe! I actually marinated the chops in the soy/italian dressing mix for a few hours as well. Then I sauteed 2 cloves of garlic and 1/2 an onion in olive oil. Then added the chops to brown. I put that mixture in a glass baking dish and poored the marinate over top. I baked for an hour on 375 but in hindsight I should have put it on 350 for about 45 minutes. Even so it was FABULOUS!

Pork Chops and Sauerkraut

This was the best pork & sauerkrat I ever made! My husband is still talking about it. I followed the receipe exactly except for omitting the bacon and I also agree with the other reviewer ~ the caraway and celery seeds made the difference. I was skeptical when I was making it thinking there was too much onion but it was perfect. I can't wait to make it again!
