Farmer's Casserole

This is a favorite in my house and at my work potlucks. My stepdaughter hates eggs but loves this. You can throw it together the night before and bake it first thing the morning. It's also great as leftovers. This is also easy to adapt by changing cheeses and/or meat.

Best Brownies

Delicious and simple to make. I'm gluten free so I used GF flour and it still came out moist and flavorful. We topped with ice cream. I will never go back to boxed brownie mix.

Tex-Mex Turkey Soup

What a great recipe to use all those turkey leftovers. I did alter the seasonings a little, I used a seasoning salt mixture and omitted the bullion. My whole family loved it including my fiancee who is not a fan usually of the taco soups.

Cheese's Baked Macaroni and Cheese

This is a great base for a recipe but I have adapted it to be Gluten Free. I omit the onion and add garlic instead, cornstarch instead of flour and quite a bit more cheese. I use GF shells instead of macaroni noodles. I also use GF bread crumbs, shredded cheese and a little cajun seasoning for the topping. This results in a nice crunchy top. My family loves this recipe and can't even tell it's GF!

Soda Cracker Candy

This is a favorite in my house. I've made the recipe as is but I've also used the following variations: instead of saltines I've used ritz, club crackers and pretzels. The salty crunch on the bottom is an amazing contrast. I made this yesterday with gluten free pretzel sticks, finely chopped almonds and used coarse salt with the nuts and it turned out amazing! My family always asks for this recipe and it's a must have around the holidays. No one ever believes me when I tell them how easy it is!!

Chewy Chocolate Chip Oatmeal Cookies

These are soft and chewy! I did make some changes. I omitted the salt, used baking powder instead if soda and added a bit of cinnamon. I also left out the walnuts and added extra chocolate chips. The result were nice fluffy, soft cookies! Definitely will make again!
