Carrot Cake III

Cooked this the other day, compared to the other carrot cake I made, this recipe is moist and soft, and I will use this recipe again. I just cut the sugar to half since I know the icing will be sweet.

Glorious Sponge Cake

This is the best sponge cake I made, it is soft and yet moist. Very easy to prepare. I baked it in a 10 inch bundt pan for 45 minutes. I beat my egg whites first, then used the same hand beater to beat my egg yolks. Sprayed baking spray on my pan. I used cake flour and sifted it before adding it to the eggyolk mix, I try not not overbeat the flour with the egg yolk mix. Thanks for sharing this recipe.

Barquillos (Wafer Rolls)

I was looking for ice cream cone recipe, but I stumbled into this. This reminds me of my childhood, my mother used to buy barquillo after coming out from the church. This barquillo taste better than the one I buy from the store, it is light and melts in your mouth. I even stuffed it with whipped cream. Since it is delicate, I only put 6 in the tray, so that I do not have to rush rolling it. After baking I place it on a cloth napkin where I will roll it and used the napkin to help me to roll. I put it on the kitchen towel with the overlapped edge down, just in case it unrolls. I baked it on silpat liner. The only problem I have was spreading it on the tray with my offset spatula. I will use this recipe again

Easy Pavlova

Love this recipe, it melts in your mouth, with a crispy crust and soft inside like marshmallow. Took pointers from other reviews, like use egg at room temperature, used 1 cup of sugar only, but it was stiil too sweet, I added sugar 1 tablespoon at a time while whipponing, I used the hand mixer at high speed, I take particular care not to overbeat the eggwhite. I folded the cornstarch by sprinkling it on top using a small strainer. Baked it at desired temperature for 1 hour, turn off the oven then left pavlova inside the oven for 1 hour. I used mango mouse to top it.
