Sarah's Applesauce

I made this in the slow cooker and then used an immersion blender to make a smooth sauce. To keep as it as healthful as possible, I did not peel the apples. This is a great homemade baby food recipe and keeps well frozen!

Cannoli Dip

I hunted for a cannoli dip recipe after trying one made by a friend. This is yummy--my preschooler even approved! It's not overly sweet, especially if you use dark chocolate chips rather than semisweet, and it goes well with a variety of dippers. Besides the waffle cone pieces, you could try vanilla wafers or biscoff cookies (or even strawberries for a slightly healthier option.)

Fajita Marinade I

Wow...what a great, fresh-tasting marinade for both meat and vegetables! It is a thousand times better than store-bought fajita marinades, especially the dry-powder varieties. I like to add a little more liquid smoke, and cilantro is a must for an extra bit of flavor.

Very yummy! After reading the reviews, we did this recipe with mahi and salmon at the same time and baked them in the oven. Both were a hit!

Zippy Summer Shrimp

These were very flavorful and a great recipe for the beach. As a time-saver, it is not necessary to devein and butterfly the shrimp (unless you have an aversion to using them whole in the shell).

Chocolate Covered Easter Eggs

Yummy and easy to make, though fairly time-consuming. I mixed my dough with a mixer rather than by hand to incorporate ingredients more evenly. I divided the dough into thirds, flavoring one with coconut, one with peanut butter, and one with maple extract. All taste great! The maple candies were hard to form since no bulk was added to the dough, so they didn't end up with true egg shapes like the others. Adding walnuts to the mixture would help. I'm already envisioning other flavor possibilities...I think lemon extract with fresh lemon zest, coated in dark chocolate would be heavenly!
