Sky High Yorkshire Pudding
This is a great recipe, that really does produce mile high yorkies! I blend everything up in the blender and add a bit of chopped fresh herbs (rosemary or thyme), a pinch of salt and pepper. The use of the blender allows for a quick pour to maintain the heat of the oil. Mmmmm

Curried Coconut Chicken
This is a great recipe! It's become a hit in our house and even the kids will eat it. The only change I make is to double the recipe and add a few tablespoons of Patak's Mild Curry Paste and saute this for at least five minutes with the garlic, onion and curry powder. This has lots of flavour without being spicy. I've experimented with adding different vegetables and find that it's best to add carrots and peppers once the chicken is almost done, then add your liquids and simmer. I also add green beans but they need to be pre-cooked ahead or use canned (which I'll note I NEVER use canned anything but with this recipe it worked out great and was fast). Some chopped cilantro on top is a nice addition of you have it. Serve over basmati rice with a side of naan and you'll be dishing up seconds for everyone. Thanks!
