Scottish Shortbread IV

Absolutely wonderful. I added pecans to half the batch to make Pecan Sandies. I also backed off the flour by a cup (personal preference) and sprinkled brown sugar on the tops just for a little crunch effect. This is a very easy recipe to modify if you want to be a little creative.

Sausage Casserole

Easy to make. I wasn't overly impressed, but I didn't use the Sage Sausage (the grocery store was out). If you have a home full of people to feed or need a dish to take to work for a pot luck then this is the perfect recipe.

Cheddar Baked Chicken

Excellent. My whole family loved this easy to make chicken. I made it exactly according to the directions except for the cooking time. I left it in the oven for 45 minutes versus the 30. Next time I make this I will make it with asiago cheese just to see how it comes out. I bet it will be good!!!

Fluffy Pancakes

Excellent pancakes! Made them this morning for my husband. It only takes a few minutes to prepare. After reviewing the comments I did a couple of things not listed in the directions. 1. Double the recipe. 2. Add a tsp. of vanilla. 3. Add one additional tablespoon of sugar. Set your griddle for about 275. 3. Let your batter set for about 10 minutes. If you get a chance, review the comments below. Lot's of good suggestions.

Potato Pancakes II

YUMMY, YUMMY, YUMMY!!!! This is the only Potato Pancake recipe you need. After reviewing other people's feedback here are some additions that I made. I added chopped up leftover bacon (could do the same with sausage), three tablespoons of flour, a pinch of garlic salt, a pinch of pepper, and onion to taste (recommend you fry up the onion first). Recommend you make them a little bigger then a sausage patty. I made six nice size pancakes with the current measurements. Recommend doubling if you are cooking for more then just three people. Cook on medium heat. Be patient, if you cook them too high you will burn them and the middle will not firm up. This one is husband approved!

Easy Broccoli Quiche

This is an easy quiche that's OK, but not something you will wow your dinner guests with. Here are the changes I made to the directions after reading other people's feedback: Put the cheese at the bottom of the pie pan (protects the bottom from becoming soggy), use 5 eggs and only one cup of milk, add chopped ham. Use fresh broccoli only (the frozen stuff holds too much water). Bake for 45 minutes.

Fried Green Tomatoes

This is the only Fried Green Tomato recipe you'll ever need. It's simply the best!!! I did not have saltine crackers so I improvised with ritz crackers and Italian Bread Crumbs. Don't run to the store, just use what is in your pantry. Recommend you add a splash of milk to your egg wash. Happy eating!!!

Poor Man's Beer Batter Fish

Everyone in my family loved this batter. I followed another reviewers suggestion of 2/3 cup water, 2/3 cup milk, and 1/8 cup baking powder. Came out great.

Quick Ziti with Swiss Cheese and Ham

Perfect for picky eaters. My kids destroyed this dish!! I did make some modifications to give it some flavor, here is what I did: sauté garlic and finely chopped onions in olive oil, then add ham. Once the pasta is done drain and mix in 2-3 tablespoons of butter (this helps the cheese). Then add the Swiss, mozzarella and provolone (shredded). For the adults I sautéd asparagus and broccoli, with onion salt in the garlic/onion/olive oil mixture that's above (in another pan). I tossed the veggie mixture with the pasta for my husband and I. Everyone was happy and it really was a fast and easy dinner. Recommend you make twice as much, we had none left over for lunch.

Fast and easy to make. Recommend you add more heavy cream than the recipe calls for. Add a little bit at a time while you are mixing so your dough will not be so dry because your going to be adding extra flour as you roll out your dough anyway. I added sharp cheddar cheese, yummy.
