Blanca's Cherry Cheese Tarts

This recipe is excellent. I have made it a few times now, but I always have too much crust or not enough filling. And no where near a can of pie filling. Also, it never makes 26 of the regular size muffins pans. So today, I finally got the ratios right so it makes 24 tarts/muffins. I did 1.5 of the recipe for the filling (3 pkgs cream cheese; 3/4 c. sugar; 3 eggs, 1.5 tsp vanilla and 1.5 tsp lemon juice. There is no need to increase the base/crust. Each muffin uses 1 tbsp of crumb mixture and just under 1/4 c. of cream cheese filling. The pie filling was just the right amount. Yum. I get requests to make these all the time!

Vegetarian Shepherd's Pie II

Love, love, love this! I've made it for potlucks as well and non-vegetarian people have commented on how good it is. The only changes I make was using buckwheat (kasha) for the barley and gluten free flour for the flour to make it GF friendly.

The flavour was very good. However, the sauce never really thickened. All the chicken had fallen off the bones, so we just ate them like that. Not sure what went wrong.

Traci's Chicken Noodle Casserole

This is very good! I only had about 3 cups of cooked chicken, so I adjusted the amounts. I used onion powder instead of onion, a dash of garlic salt and a dash of dry mustard. I used a mix of white cheddar and "orange" cheddar cheese. A big hit in this house. Oh, I didn't realize it was to sit overnight. It turned out fine...I just cooked it a bit longer.

Caribbean Stir-Fried Shrimp

Zippy Shepherd's Pie

Chocolate Date Squares

These were surprisingly delicious (because I've never liked dates). But you wouldn't know there were dates in them. My kids really liked them and they hate dates as well. I made them because my husband loves date squares. The only thing is there were more like a cake then a square, but still delicious.

Robbi's M&M Cookies

These are amazing. My Mom used to make them every Christmas with the red and green M&M's. I used mini M&M's. I had a hard time getting them into the container as they seemed to disappear from the cooling rack!
