Stuffed Eggplant Parmesan
I made it tonight and it was great! skin was still tough after extra time but so delicious. I didn't have sauce so I used diced tomatoes with hot peppers. It was to spicy but will do it again just add half a can to sauce... It is so pretty and so easy and can you say tasty!!!
