Green Chile Spinach Quiche

Great quiche recipe, and I have tried a lot. I will be sticking to this one. Instead of making one large pie, I made 12 cupcake (regular, not mini-)size quiches so that I could freeze them. I halved the recipe, using 6 eggs instead of 12, and added chopped bacon to the filling. Also, I didn't have enough pie crust, so three of the quiches were crustless and I think I like them even better than the ones with crust! Thanks for this recipe!

Slow Cooker Ham and Bean Stew

Easy, delicious, and makes enough for 6-8 people...great way to use leftover ham. I used black-eyed peas, pinto beans, and Great Northern beans, sauteed chopped onion, garlic, and celery in hot oil before adding it to the pot. I also used a seasoning salt. The flavor was great and I even forgot to dollop some sour cream on it. Served with buttermilk cornbread.

Cake Balls

Excellent, easy, and delicious. Got it right the first time around, using reviews to make very minor adjustments: I put prepared balls in refrigerator a couple of hours (some until 2 days later!) before I dipped them. The ones that warmed up while I was dipping were much more difficult to cover. If you refrigerate, and plan to decorate with sprinkles or something that should stick to coating, do that almost immediately because the coating gets hard quickly on the cold cake. I used dark chocolate cake mix with the coconut, pecan frosting and it is really good.

Cream Cheese Frosting II

Great taste, but I had to keep adding sugar (almost two boxes!) to get the consistency I wanted. I will half the cream cheese and butter next time.

Easy Mexican Casserole

Easy Tilapia with Wine and Tomatoes

Delish! I might add a little more salt and pepper, or a few more tomatoes since tilapia is a mild taste. Also, since I don't have a grill, I followed the directions to a tee, then baked at 350 in the oven...about 15 minutes. Served with brown rice. Yum.

Slow Cooker Teriyaki Pork Tenderloin

too spicy for our taste, but for people who like a strong teriyaki taste, along with the hot, it is on target. The loin itself came out fork tender.

Chocolate Chip Orange Zucchini Bread

Delicious...I didn't have choc chips so I added a couple of Hershey bars chopped up. Also, made a glaze of melted butter, fresh oj, and confectioner's sugar...yum.

Kentucky Style Fried Green Tomatoes

As a Kentuckian, any recipe with Kentucky-style catches my eye. These fgt's are spot-on. I fried my bacon first, then used the same pan with the same grease to fry the tomatoes...then spread some mayo on bread, put it together and grill the whole thing! YUM!!!! I also use almost-red tomatoes, like them as well as green.

Salsa Guacamole

Delicious, easy, and pretty! I did not add the garlic powder, nor the green onions, because the salsa I used is the fresh kind from Kroger and it has lots of garlic and onion in it already. I halved the recipe and had enough for a family, and more.

Kentucky Bourbon Balls

Finally! A bourbon ball recipe that tastes like real Kentucky candy. I have seen so many that have CRUMBS of some sort in them, that I knew this was the correct recipe the minute I read it. One other comment...I could not get the sugar and butter to blend smoothly until I added one more stick of butter. Then it blended beautifully. I was using a cheap little hand mixer, this is probably the reason, but I wondered if anyone else had the same problem?
