Quick and Easy Brownies

I attempted these brownies in a halved batch - the flavour was good, but I found the texture too cakey and soft. I prefer a more dense, chewy brownie, so this recipe isn't for me.

To Die For Blueberry Muffins

LOVE these - so quick and easy and so delicious! I've made them twice now, and the only thing I change is add a touch more milk to the batter - mostly because I use frozen blueberries which makes the batter a little 'thicker', for lack of a better word. I also added some chopped walnuts to the topping at husband's behest. This is absolutely my 'go to' recipe for blueberry muffins from now on!

Good Old Fashioned Pancakes

I followed this recipe and directions exactly, and ended up with thick, glutenous hockey pucks. They were closer to scones. Horrible.

MMMMM... Brownies

I loved these! I was looking for a brownie recipe that didn't require cocoa powder, which I didn't have. Followed directions exactly, the only difference was that I added a half cup of toasted hazelnuts. These were fudgy and chewy and perfect! I only had a glass cake pan, though, so I had to bake mine at 350 for 30 minutes, which worked out great! I will be making this again!

Strawberry Muffins

I thought these were pretty good - I used fresh ripe strawberries and followed the recipe to the letter with one exception - I added a tsp of vanilla. I thought they were tasty, if a bit plain. I think next time I'll do a streusel on top for a bit of extra flavour. Other than that, they were enjoyable and easy to make.

Slow Cooker Beef Stroganoff I

Easy & tasty! I didn't have golden mushroom soup, so I used low fat cream of mushroom soup. I subbed beef broth for the water as previous reviewers suggested. I also used sour cream instead of cream cheese at the end - just a personal preference. Added a bunch of sliced fresh mushrooms and let them simmer for an hour before serving. Awesome comfort food - husband loved it!

Chewy Sugar Cookies

These were nice, easy cookies - the only complaint is that the 8-10 minute cook time wasn't nearly enough for the 'crunchy-on-the-outside-chewy-on-the-inside' texture. Next time I'll bake for a good 13-15 minutes.

Greek Style Potatoes

Delicious! I cut down the oil a touch, and I used water with no bouillon cube (didn't have any). I added oregano per the other reviews, which was great. I'm pretty obsessed with lemon, so I added about a tsp of lemon zest. I loved them as is - though my husband preferred a slightly milder lemon flavour, so I'll skip the lemon zest next time. I will be making these regularly!

Pork Chop and Potato Casserole

Tasty and relatively simple to make - the only arduous part is thinly slicing the potatoes. I added a finely chopped clove of garlic and a couple splashes of hot sauce for a little extra zip. My husband loved the pork chops - giving them a really good brown first was essential! The potatoes were pretty good, but I think next time, I'm just going to bake the pork chops and onions in the casserole, make skin-on mashed baby potatoes and reserve the sauce to put on the potatoes as liberally or conservatively as I want - and I wouldn't have to slice all the potatoes. The pork chops were soooo good, though. Thumbs up!

White Bread For The Bread Machine

Delicious! I follow the recipe exactly, except that I used 50/50 white bread flour & whole wheat all purpose flour. I put it through the dough cycle on my bread machine, took it out and put it in a metal bread pan and let it rise for another 30 minutes. Baked in the oven at 350 for 35 minutes and it turned out perfectly! Agreed, it is a plain bread and snot busting with flavours - but it's a fantastic basic bread that's soft and moist with a perfectly crispy crust. I will definitely be making again!

Bread Machine Focaccia

Amazing! Followed to the letter, and it came out perfectly. Crispy crust, soft interior. I meant to take a picture, but we couldn't help devouring a big hunk of it with olive oil and balsamic vinegar as soon as it was cool enough to cut. Will absolutely make again!

Mini Cheesecakes I

These were easy and tasty! I used this recipe as a base for mini lemon cheesecakes. Zested and juiced half a lemon into the cream cheese & sugar mixture in lieu of vanilla (before folding in the eggs). Also used the basic graham cracker crumbs & melted butter crust instead of the vanilla wafers. Delicious! Didn't need a topping, the little flecks of lemon zest looked quite attractive.

First time making any variety of quiche, and these are easy and delicious! I wanted to try a different crust with it, and other than that followed the recipe exactly. They are wonderful and will make for a very quick, hearty breakfast for our household that's out the door before 7am! A+

Scones

It was my first time making scones and this was a very easy recipe to follow. I followed the recipe exactly and they turned out beautifully. Excited to try out some variations! Update: I've made these a number of times now. I still make the recipe exactly as written, no changes to the amount of liquid or anything. I do use the little trick of grating the chilled butter on the cheese grater - much easier! I've found that rolling out the dough until it's about an inch thick and then using a mug to cut out little rounds works best for us. We like to halve them and pop them in the toaster for breakfast in the morning and cutting them into 8 large triangular scones doesn't lend itself well to that. My husband's favourite version of these is sharp cheddar, while my favourite is 'as is' with butter and jam! So tasty!

Popovers

Followed directions (though halved the recipe), but my popovers didn't 'pop'. The oven I used is fairly new to me, though, so I suspect it was more to do with the baker than the recipe. Having said all that, my little 'popovers' did taste quite delicious, they just didn't turn out like the photo.
